Subject: Recipe for Little Jay.... Ribs in the oven.
Savory Oven Barbequed Spare
Ribs
Ingredients:
1 1/2 cups ketchup
3 to 5 pounds lean boneless pork spareribs
4 Tablespoons Worcestershire sauce
4 Tablespoons soy sauce
4 Tablespoons red wine vinegar
1 1/2 cups brown sugar
1/3 cup water flour to coat ribs
1 green pepper
1 can pineapple tidbits
Preparation:
Put ingredients (except ribs) into a large sauce pan and bring to a
boil. Coat the ribs with flour, then dip them into the hot BBQ sauce,
covering all sides. Put ribs into an appropriate size baking pan. Add
pineapple and diced green pepper to the remaining sauce and completely
cover the ribs. Cover pan with aluminum foil and bake in a 300 degree
oven for 3 to 3 1/2 hours Serve ribs and sauce over cooked rice.

EZ Chili Recipe
About 1/2 small box Spaghetti
1 1/2 lb. Ground Beef or ground turkey
1-2 Onions (chopped or sliced)
1/2 Green Pepper, diced (chopped small)
2 Tbs. Olive oil
1/2 jar MEXENE'S Chili Powder or 1/2 can SAUDER'S (from Preston
Safeway stores)
Lg can or 2 small cans BROOKS Chili Hot or Hot & Spicy Beans(no other
brand tastes like this)
1 small can Tomato Paste
2 small cans water
1 reg size can diced Tomatos, drained
1 tsp. sugar (to cut the tomato-y taste)
1/4-1/2 cup Ketchup (I thump it out in pot)
1/4-1/2 cup BBQ Sauce (I thump it out)
2-3 'thumps' Worceschire Sauce
1 tsp. cider vinegar
Salt
Break spaghetti in half and boil about 12 min. While spaghetti is
boiling, brown ground beef, onions & green pepper in oil in dutch
oven
or large skillet. Stir in chili powder. Add rest of ingredients. Mix
well. (Season to taste with salt.) Drain cooked spaghetti and gently
mix in with beef mixture. Cover and simmer real low for at least 20
minutes. This is a sweet-hot chili, not too thick.

Subject: Sweet and Spicy Chicken Wings

This is a comment for Paul Infante about the Sweet and
Spicy Chicken Wings. They were the BOMB BABY!!!! I
didn't even know I liked apricots until I fixed those
wings. I fixed some for a Home Interior Party I had
over the weekend and the main focus from everyone was
on those wings rather than ordering something from the
party. Needless to say, there was none left over.
They were soooooo good!

Subject: Beef Stew
It's cold and raining this morning so I put on a big pot of beef stew.
The aroma is so heavenly, thought you might enjoy this recipe.
2 lbs. stew meat: flour each piece and in a large dutch oven, brown
well in bacon grease.
Add:
4 c. water
l lg. can diced tomatoes
1 T. Worcestershire sauce
2 t. salt
1 t. garlic salt
3/4 t. black pepper
1/4 t. ground allspice
2 bay leaves
Bring to a boil, cover, reduce heat and simmer 3 hours. Cut 4 scraped
carrots and 2 ribs of celery into 2-inch lengths. Peel 4 red potatoes
and 3 small onions into eights. Cut 2 bell peppers into 1-inch
pieces.
Add to meat. Cover and simmer until tender. Combine 3 T. flour and
3 T. water, stirring well; stir into stew.
Bring to a boil; boil stirring constantly one minute or until thick
and bubbly.
You may prefer more or less liquid in your stew. The use of cold
water extracts more flavor from the beef, which enhances the flavor
of the liquid.
My grandmother liked to add a can of veg. or tomato soup as part of
the liquid. A stew can express your individual taste but don't try to
"stretch" it or you are lost! I sometimes add left-over cooked
rice.
Serve this with cornbread, of course!!

BATTER (TEMPURA) FOR FRYING
FISH
Ingredients:
1 cup all-purpose flour
1 cup evaporated milk
3 large eggs
1 tsp paprika
1 tsp salt
Directions:
Blend ingredients in a bowl. Have your oil (peanut is best) hot.
Coat the fish fillets in the batter and using a wire basket, plunge
them into the hot oil. By the time the coating is a nice golden brown
the fish inside should be cooked. Remove and drain on paper
toweling.

Subject: Taco Casserole
TACO CASSEROLE
1 pound lean ground beef. Preferably ground round or leaner.
1 small to medium onion diced
1 small green bell pepper diced
1 package of taco seasoning (dry powder), I use Lawrys Taco Spices
&
Seasonings
1 bag of plain tortilla chips (like Tostitos)
1 large package of American cheese slices
1 small can of enchilada sauce (any brand), I use Old El Paso brand
1 small can 10 3/4 oz. Campbells cream of mushroom soup (can use
regular, 98% Fat Free or Healthy Request).
1 small can 10 3/4 oz. Campbells cream of chicken soup (can use
regular, 98% Fat Free or Healthy Request).
1 can of water
Preheat oven to 350 degrees
In medium skillet, brown ground beef. While beef is browning, sauté
diced onion and bell pepper in a separate skillet (for a healthier way
to sauté use lemon, orange or lime juice instead of oil), sauté until
onion is translucent. In a large bowl combine taco seasoning,
enchilada sauce, mushroom soup, chicken soup and water. Stir
ingredients until well blended. After meat is done add to the liquid
mixture in the bowl along with the onions and bell pepper. Mix
thoroughly. In a 2 1/2 or 3 quart round casserole dish put a layer
of mixture on bottom. On top of mixture on bottom put a layer of
cheese slices until covered. Put a layer of tortilla chips on top of
cheese (you can break them up if it makes it easier). Continue to
layer until there is no mixture left. The layering should go
something like this, meat mixture, cheese, chips, meat mixture,
cheese, chips, meat mixture and last layer cheese. This layering may
vary according to how you like it. Cover, place in 350 degree oven
for 45 minutes to an hour. Take out when it appears hot and bubbling
and let stand for at least 10 to15 minutes before serving.
There are so many different ingredients you can add to enhance the
flavor of this dish, the possibilities are endless. It is up to you
how you like it.
Suggestions: sprinkle chopped green onion on top after it comes out of
oven.
Eat with sour cream, sliced avocado, black olives, jalapenos, green
chilis, Tabasco, Picante, fresh tortilla chips, tortillas, lettuce,
fresh chopped tomatoes etc...

BROCCOLI AND CARROT STIR-FRY:
- 1/2 bag of frozen broccoli, or fresh broccoli cut up
- 3-4 sliced up carrots
- Soy Sauce, several dashes
- Lemon Juice, optional, but a few dashes works well
- Oil, just a dash on the bottom of the pan or wok
Put oil in pan, heat it up and toss everything in. stir around about
2-3 minutes. If you like the broccoli chewy, you can cook a bit
longer.
