Country Pork Sausage


Ingredients

6 lbs. Lean pork
3 lbs. fat pork
3 tablespoons salt
2 tablespoons black pepper
1/4 teaspoon red pepper
4 tablespoons sage; sifted

Directions

Put the pork through the meat grinder, add the seasonings and mix
thoroughly. Grind again so the meat may be nice and fine. Savory,
mace, cloves and nutmeg may be added if you like.

Deer Sausage (by Merlin P. Bodin - "A Cajun Family's Recipe Book")

Ingredients

7-1/2 pounds venison, ground
7-1/2 pounds pork, ground
4 ounces salt
1 ounce ground black pepper
1-1/2 ounces Accent seasoning mix
1 ounce cayenne
3 ounces light brown sugar
1 ounce Louisiana hot sauce
1 ounce paprika
3 ounces Lea & Perrins Worcestershire Sauce
3 whole fresh green onion, chopped

Directions

Mix all of the above together well. Stuff in casings.

BEEF and TURKEY PARTY TRAY

This is an easy make ahead tray to do at home. Why pay someone else
to have all the fun of decorating? Serve with freshly baked, thinly
sliced baguette bread and a bottle of chilled Sauvignon Blanc.

Make this for any occasion: Cocktail parties, weddings, graduations,
showers, Christmas, Thanksgiving, birthdays, picnics, buffets,
barbecues, etc.

Here's all you need for a 12-inch tray:

1 pound deli Roast Beef, sliced thinly
1/2 pound deli Turkey Breast, sliced thinly
a few green olives stuffed with pimento, sliced
curly leafed Parsley for garnish

Directions

Fold each cut of meat into approximately a one-inch or more width.

Start with the folded beef slices, placing them on the outer portion
of the tray, going around in a circle. Place the turkey in the second
row on top of the beef slices, approximately one-inch or more up from
the edge. Continue placing all the folded meat around the tray until
it is completely covered.

Garnish with parsley in the center of the tray as well as other areas
and add a few sliced stuffed green olives for color and it is ready
to serve, or it can be covered and refrigerated to be served at a
later time.

Tailgate Chili
Serves 8

NOTE: This "party hearty" chili, perfect for a pre-game picnic, is
made with dried beans, but you can substitute 5 cups canned small red
beans or kidney beans. Rinse and drain the beans well to eliminate
some of the excess sodium; when the beans go into the pot, add a cup
of low-sodium broth or tomato juice in place of the reserved cooking
liquid that the recipe calls for. This chili is only modestly hot, so
you may want to pump up the spices a bit. Serve with warm cornbread
or tortillas.

Ingredients

2 cups small dried red beans (14 oz)
2 tablespoons extra virgin olive oil
2 medium onions, finely chopped
3 cloves garlic, finely chopped
1 red bell pepper, cut into 1/2" chunks
1 green bell pepper, cut into 1/2" chunks
1 pickled jalapeño pepper, finely chopped
1 tablespoon chili powder
2-1/2 tsp ground cumin
2 tsp ground coriander
1 can (28 oz) tomatoes, chopped with their juice
1/4 cup tomato paste
1-1/2 tsp salt
1-1/3 pounds ground turkey (or ground beef and ground pork)

Directions

1. In large saucepan, combine beans and water to cover by 2". Bring
to a boil, reduce to a simmer, cover, and cook until beans are
tender, about 1-1/2 hours, adding more water if necessary to keep
beans covered. When beans are tender, drain, reserving 1 cup of
cooking liquid.
2. Meanwhile, in 4-quart Dutch oven, heat oil over medium heat. Add
onion and garlic and cook, stirring frequently, 10 minutes or until
onion is tender. Add bell peppers and jalapeño and cook 10 minutes or
until bell peppers are tender.
3. Stir in chili powder, cumin, and coriander and cook 1 minute. Add
tomatoes, tomato paste, salt, beans, and reserved bean cooking liquid
and bring to a boil. Reduce to a simmer and cook uncovered 30 minutes
or until chili is flavorful.
4. Crumble in turkey and cook, stirring frequently, 10 to 15 minutes
or until turkey is cooked through and chili is lightly thickened.

Masaman Curry with Beef (Gaeng Masaman Nua)
Makes 6 cups


Ingredients

Peanut oil
1 tbsp garlic, chopped fine
1 tbsp ginger, chopped fine
1 tbsp lemon grass, chopped fine
1 tbsp Thai basil, chopped
1-1/2 lb stewing beef (cut into 1-inch cubes)
1-1/2 cup coconut milk
2 tbsp red curry paste (Thai Musaman)
1 tbsp lime zest, shredded
1 tbsp lime leaves, shredded
Fish sauce to taste
1-4 tsp chili paste
2 cups potatoes (cut into 1-inch cubes)
1 cup pearl onions

Directions

First, prepare the curry paste and coconut milk separately. Add the
paste with some of the 'cream' from the coconut milk and heat until
the oil starts to separate. Then, in a separate pan, heat peanut oil,
garlic, ginger and lemon grass. Stir-fry 1 minute until oil is
aromatic.

Add beef and stir-fry 3 minutes until lightly browned and add the
curry paste/coconut cream mixture.

Add the rest of the coconut milk, lime zest, lime leaves, basil, fish
sauce and chili paste, bring to a boil, and reduce heat.

Simmer 45 minutes, until beef is tender.

When beef is just tender, add potatoes and onions to curry and simmer
30 minutes, until potatoes are cooked.

How ironic. I was just thinking about requesting a jelly cake recipe
and before I could even do it - Voila. My husband's family is from
Mississippi and he always talks about the jelly cake that his
grandmother made. But, he said it was a special kind of jelly. The
way he describes it, it sounds as if it should be apple jelly, but he's
not sure. Is there a special brand of jelly that folks from the South
use to make jelly cake? I'd like to surprise him with an authentic
"Jelly Cake."

BITE SIZE CUPCAKES:

- 1/2 cup butter
- 1 1/2 ounces unsweetened baking chocolate
- 1 cup granulated sugar
- 2 eggs, beaten
- 2/3 cup sifted all-purpose flour
- 1 tsp vanilla
- 1 cup chopped pecans
- dash of salt

FROSTING:

- 4 Tbs butter
- 1/2 ounce unsweetened baking chocolate
-2 cups sifted confectioners sugar
- cold coffee

In a medium saucepan w/ a heavy bottom, melt butter and chocolate over
low heat. Remove from heat; pour over sugar in a medium mixing bowl.
Add eggs, flour, vanilla, pecans and salt; blend well. Place petit
four paper baking cups on cookie sheet. Fill each cup half full with
batter. Bake in a preheated 350 degree oven for 10-12 minutes, or
until done. Let cool, then frost. For frosting, melt butter and
chocolate in a small saucepan. Remove from heat. add confectioners
sugar and enough cold coffee to make a smooth frosting. Spread on
cooled cupcakes. MAKES 70-80 bite size cupcakes.

Subject: Lasagne Soup

This recipe was submitted some time ago from 'Linda'--although I have
not tried it, I have heard it is very good.
LASAGNA SOUP
1 lb. (maybe more) very lean hamburger
1 can diced tomatoes (Italian seasoned)
2 cans beef broth
1 small box flat lasagna noodles (or any kind if you want--the flat
ones just look better)
1 medium onion-cut up
1/4 cup parmesan cheese
garlic powder, salt
**garnish with mozzarella cheese
Fry down the hamburger and onions. You shouldn't have much to drain (I
didn't have to drain at all). Open your cans and put in large
saucepot. Add the hamburger mixture, garlic powder, salt. While you
are waiting for it to come to a boil, break up your dry noodles into
spoon size pieces. Put those in the pot and let cook until the noodles
are done. (You might need to add a bit of water if the noodles soak up
a lot.) Just before it is ready to serve, dump in your parmesan cheese
and stir well.
Serve in bowls garnished with shredded mozzarella cheese. Good with
sliced French or Italian bread.
4 servings...enjoy!

Carmalized Onion Quesadillas

Yield: 4 Servings
1 tb Olive oil1 Red onion; halved and thinly.. sliced crosswise
4 Green onions; sliced3 Cloves garlic; chopped 3/4 ts Ground
cumin 1/4 ts Oregano; crumbled 1 tb Lime juice 4 lg Flour tortillas
4 oz Shredded jalapeno-Jack.. cheese 4 oz Shredded cheddar
cheeseSalsa; optional
Sour cream; optional Cook onions and garlic in heated oil, covered,
until softened, about 15 minutes, stirring occasionally. Stir in lime
juice.Preheat oven to 400°.Spread onion mixture evenly among 2
tortillasplaced on a baking sheet.
Sprinkle with cheeses; top with remaining tortillas. Bake about 8
minutes, until cheese is melted and tortillas are golden around the
edges.
Let stand 5 minutes, cut each into 6 wedges. Garnish with salsa and
sour cream, if desired.

1 lb.canned Mushrooms or 1 1/2 cups fresh cooked mushrooms
6 oz. chedder cheese
6 oz. swiss cheese grated
2/3 cup mayonaise 2 Tab.parsely
salt to taste
Mix it all up and then mound it by Tablespoons
full to party rye bread. Bake at 350 degrees for 15 minutes
Makes 30 wonderful appetizers ALSO : If you Do Not Like Rye Bread

1/4 lb. ground pork sausage
1 pkg. (1oz.) dry pepperoni mix
1/3 cup. water
COMBINE ALL Ingredients & mix throughly ( MIX WITH CLEAN
HANDS) . Hands work the best. Divide meat into 3 or 4 equal portions
and roll into long rolls. BAKE ON : wire rack with a drip pan at 300
degrees for 1 hour. Wrap cooked meat in rolls in tin foil or wax
paper.
I use wax paper unless i freeze it. IT"S FABULOUS !!

Venison Oven Sausage
15 lbs venison hamburg mixed with beeffat
3 Tab. coarse black pepper
1-1/4 tsp. mace
1-1/8 tsp. dry mustard
1 tsp. accent 1 tsp. lawery's seasoned salt
1 tsp. garlic powder
1tsp. crushed garlic
1 Tab. lawery's hickory smoked salt
2/3 cup brown sugar
1 cup Morton's tender Quick salt meat cure
1-1/2 bottle (4oz.) liquid smoke
Mix All ingredients well and refrigerate covered tightly for 24 hours.
Pack the mixture into unbleached white muslin
sleeves, measuring 4x12 inches long. Pack meat tightly and tie ends
together. Place bags of meat in broiler pans and bake 5 hours at
225 degrees. Turn over 1/2 thru baking time. When complete, open
oven door and remove rolls when cool. ENJOY !

Mel's Diner Chicken Cilantro Soup

Notes: This rich soup is from Mel's Dinner in Wheeler, Texas.

Ingredients:
4 cooked chicken breasts or 4 C. chopped chicken
2 cans chicken broth
2 cans chopped tomatoes
4 Tbsp. chopped fresh cilantro
1 medium onion, sliced in rings and sautéed in butter
1/2 tsp. black pepper

Preparation:
Bring all ingredients to a boil. Simmer 45 minutes to 1 hour. Serve
soup over a thin layer of crushed taco chips in bottom of soup bowl.
Add grated Monterey Jack Cheese on top.

I need a recipe for Smothered Chicken.

I remember Sundays after church we would come home to the
smell of my mother's delicious cooking. I can't seem to
master her Smothered Chicken. I can finally cook a better
than decent pork chop and my family thanks all of you.
Next Sunday, Smothered Chicken, Rice, Italian Style Green
Beans (with tomatoes and potatoes), Apple or Sweet Potato
Cobbler and lots of Sweet Iced Tea. Help a sister out.

These rolls are a family favorite. This recipe uses less sugar, salt
and fat.

2 packages (1/14 ounce each) active dry yeast
2 3/4 cups warm water (110 to 115 degrees), divided
1 egg, beaten
1/3 cup vegetable oil
1/4 cup honey or molasses
1 tablespoon salt
2 teaspoons dill weed
2 teaspoons dried thyme
2 teaspoon dried basil
1 teaspoon onion powder
4 cups whole wheat flour
4 to 4 1/2 cups all-purpose flour

In a mixing bowl, dissolve yeast in 1/2 cup warm water. Add next nine
ingredients and remaining water; beat until smooth. Gradually add
enough all-purpose flour to form a soft dough. Turn onto a floured
board; knead until smooth and elastic, 6-8 minutes. Place in a greased
bowl; turn once to grease top. cover and let rise in a warm place
until doubled, about 1 hour.
Punch dough down. Shape into 1-inch balls. Place three balls each in
greased muffin cups. Cover and let rise until doubled, 20-25 minutes.
Bake at 375 for 12-15 minutes or until tops are golden brown.
Remove from pan to a wire rack.
Makes 4 dozen.
