Subject: 80-YEAR-OLD POTATO SALAD RECIPE
80-Year- Old Potato Salad Recipe
That's what my grandson calls it. It's the recipe that is at least
80 years old, not the potato salad! It was my Mother's recipe.
Ingredients:
3 cups cooked potatoes cut into small cubes
8 hard-boiled eggs
1 cup minced yellow onion
1 ½ cups Mayonnaise *
½ cup Prepared Mustard *
1 tbsp celery seed or minced fresh celery
1 tbsp dill weed, preferably fresh
1 tsp cayenne pepper
½ cup sweet cucumber relish
Directions:
Combine the onion, celery, relish and dill with ½ cup mayonnaise
in a small bowl. Let this marinate while working on the rest. Put the
potatoes in a large bowl. After removing shell from eggs, separate
yolks onto a large dinner plate and chip the white into the potatoes.
Mash the yolks and blend with mustard, mayonnaise and cayenne. Combine
all ingredients and mix well. I prefer to let each person add salt
to taste if so desired.
Makes 6 generous servings. Tastes even better the next day, but
needs refrigeration.

Subject: Gulf Coast Shrimp & Crab Boil
GULF COAST SHRIMP & CRAB BOIL
Serves 15
1 (2.5 ounce) jar liquid shellfish boil
3 pounds kielbasa sausage, cut into 1 inch pieces
5 pounds new red potatoes
4 lemons, halved
1 tablespoon diced green chile pepper, or to taste
12 ears fresh corn
10 pounds medium shrimp - peeled and deveined
12 blue crabs, cleaned
1) Use a very large pot (we use a 40 quart pot), fill it half full
with water; bring water to a full boil. Add salt, shellfish boil,
sausage, and potatoes. Let cook until the potatoes are approximately
1/2 completed cooking.
2) Stir in lemons, hot peppers, and corn. Continue boiling until
all
of the vegetables are tender. Turn off the heat.
3) Mix in shrimp and crab. Cover pot and let sit for 10 to 15 minutes.
When shrimp are pink and the crabmeat opaque and flaky, remove all
of
the vegetables and shellfish from the pot, and drain well. Serve
immediately.

Subject: Never-Fail Meringue

This works every time:
2 tablespoons sugar
1 tablespoon corn starch
1/2 cup water
4 egg whites
1/8 teaspoon salt
1/2 teaspoon vanilla
6 tablespoons sugar
Combine the first 3 ingredients and cook over medium heat, stirring
constantly until thick and clear. Cool completely. Beat egg whites
with salt and vanilla until soft mounds form. Add 6 tablespoons
sugar gradually, beating well after each addition. Add cooled
cornstarch mixture and continue beating until it forms into soft
peaks. Spread meringue to crust edges on your pie.

Subject: Christmas Delight-Cranberry Raccoon

Cranberry Raccoon:
2 1/2 to 3 lbs of Raccoon pieces (remove the fat and glands)
1 cup of finely chopped cranberries
1 cup apple cider
1/4 cup honey
pinch of grated orange peel
a tad of salt
1/8 teaspoon of ground cloves
1/8 teaspoon of nutmeg
Put the racoon in a crock pot for 7-8 hours; then add other
ingredients and cook for an additional 4-5 hours...enjoy...
This was a favorite Christmas dish. I liked it better than ham,
turkey, goose and other Northern fare. Had to import the cranberries
and spices tho'. This will feed a small Southern family and a whole
bunch of yankees. Hides will sell for 25 to 35 dollars and will
cover the cost of the cranberries and spices.

Hello my friends . I thank you for the recipes that I had been looking
for a while. Could you please copy the (PEACH COBBLER ) recipes again

Iam looking for a recipe for just a plain layer cake for any icing
.
Sweet Potato Cobbler
Pastry for double-crust 9-in pie
3 c. sliced cooked sweet potatoes
1 c. sugar
Butter or margarine
1tsp ground nutmeg
1/2 tsp ground cinnamon
11/4 c. water
Roll 2/3 of crust and place in bottom of an ungreased 10 inch square
baking dish or 9 inch skillet . Combine sweet potatoes and sugar ; put
on top of bottom pie crust. Roll out remaining pastry and cut into
strips ; layer strips across pan in a lattice pattern ; dot with
butter . Sprinkle with nutmeg and cinnamon. Pour water over top of
dish and bake at 350 degrees for 45 to 60 minutes.
I am also looking for a recipe for the HOMEMADE BUTTER ROLL .
