Subject: Cajun Xmas (Deloris's Jambalaya )
I have a dear friend in La. with 5 kids who celebrates every year
by
making this and then enjoying her kids rather than cooking all day.
I
dearly love this recipe.

PS It doesn't freeze too well as the rice gets mushy. Could freeze
and
add rice later!

Deloris's Jambalaya
1 bunch of greens onions (chopped)
1 onion (chopped)
2 celery stalks(thinly sliced)
1 green(Bell)pepper (chopped)
1 lb. smoked sausage(sliced)
1 cup boiled chicken
2 Tbs. margarine
Take all of these ingredients, place in skillet and cook until
vegetables
are tender.
Add:
1 can of Rotel tomatoes
1 can of diced tomatoes
1 can of cream of chicken soup
2 cans of chicken broth (or 3cups of homemade chicken broth)
salt, pepper and hot sauce to taste
enough Kitchen Bouquet to make a darker color
Cook slowly covered for about 45 minutes to an hour
Add:
Instant Rice....about 2 cups
let stand about 10 minutes and you have yourself a pot of Jambalaya
Optional
you may add shrimp instead of boiled chicken
You can substitute the Rotel tomatoes for regular tomatoes if you
don't like spicy. As far as smoked sausage, I prefer Cajun style
or
a texture sausage such as Andouille.

Betty Jo's Sausage and Cheese Grits
Wesson No Stick Cooking Spray
1 pound mild or hot cooked sausage
crumbled and drained
1 1/2 cups grits
2 1/2 cups shredded cheddar cheese
3 tablespoons Wesson Vegetable Oil
1 1/2 cups milk
3 eggs slightly beaten
Preheat oven to 350º F. Lightly spray a 13 x 9 x 2 inch
baking dish with Wesson Cooking Spray. Evenly spread the
sausage on bottom of dish; set aside. Bring 4 1/2 cups
water to a boil in a large saucepan. Stir in grits and
lower heat. Cook 5 minutes until thickened, stirring
occasionally. Add cheese and Wesson Oil; stir until cheese
has melted. Stir in milk and eggs; blend well. Evenly
spoon mixture over sausage; bake uncovered, 1 hour or until
grits have set. Makes 6-8 servings.

POPEYE'S GRAVY

Quite simple,
I use salt (regular salt), pepper and garlic powder (not garlic
salt).
Add yellow corn meal to your flour batter and fry as usual (deep
fry).
I've always, gotten great comments on my fried chicken.

Subject: Noodles
Buttered Garlic Noodles
Serves 2
Ingredients
1/2 teaspoon garlic powder
1/2 teaspoon McCormick's Salt and Spice
1/2 cup melted butter
8 oz. cooked noodles
1/2 cup Monterey Jack Cheese (or your choice)
Directions
Combine garlic powder, Salt and Spice and melted butter. Toss with
the drained and cooked noodles. Add shredded Monterey Jack cheese
to
hot noodles and serve. Note: Great with cold beer and Italian bread
drizzled with olive oil.

Hot Wings
Ingredients
1 lb. cooked chicken wings
1 cup Winger Sauce (see below)
1 cup melted butter
1 teaspoon Italian Seasoning
1/2 teaspoon coarse ground black pepper
1/2 teaspoon garlic Powder
1 oz. chopped parsley
Directions
Cook wings in 350 degree oven for 15 minutes or until done. Combine
all other ingredients in a bowl and mix well. Place wings in the
bowl
with the sauce mix. Stir and serve hot.
Winger's Buffalo Wing Sauce
2-1/2 cups brown sugar
3 tablespoons light corn syrup
1/3 cup Franks Red Hot pepper sauce (or any other brand of Louisiana
hot sauce, but not Tabasco)
1 tablespoon apple cider vinegar
1/2 cup hot water
Directions
Place brown sugar and corn syrup in medium saucepan and melt over
medium heat until boiling. Cook for 3 minutes, stirring constantly
or
it will burn.
Add hot water, pepper sauce and vinegar. Stir all ingredients
together well and continue cooking at a low boil, stirring often
until mixture has reduced to a
syrupy consistency (about 15 minutes). The sauce will thicken
considerably as it cools.

Subject: Chicken
Southern Buttermilk Fried Chicken
This recipe is a family favorite my father used to prepare. He was
a
wonderful cook and I hope you enjoy this recipe.
Ingredients
1 frying chicken, cut into pieces
1 cup buttermilk
1/2 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon pepper
vegetable oil
Put chicken pieces into a bowl and pour buttermilk over top and
marinate at least one hour. In another bowl mix flour and seasonings
(Dad used garlic powder, onion powder and finely crushed basil which
you my add to the flour or buttermilk). Remove chicken from
buttermilk and roll into flour mix. Pour about 1 inch of oil into
skillet. Make sure oil gets HOT, but not smoking. Cook until one
side
is browned, then turn and brown the other side (about 20 minutes
total).
Remove chicken and place on paper towels to drain. Remove oil except
for about 1/3 cup from skillet. Add 1/3 cup flour to oil and brown
lightly. Add 2 cups water to thicken, then add more if needed to
thin
the gravy. Serve with mashed potatoes or rice and hot, buttered
biscuits or hot, buttered cornbread.

Hello! I am looking for a peach cobbler , basic layers for any icing,
and this other cake my aunt use to make it before she past ,but we
don't know what it is called and we don''t know all of the
ingredients.Some of them are a boxed yellow cake made from the
direction carnation milk or the sweetened condensed milk,coconut,
and
maybe some coolwhip . I know that she made holes and poured the milk
in .
