Coconut Cake
Duncan Hines yellow cake mix (bake in a 13 x 9 inch pan)
1 - 15oz. can Cream of Coconut
1 - 14 oz. can Eagle Brand condensed milk
1 - 7oz. can coconut
1 - 8oz. container of Cool Whip
Mix cream coconut, Eagle Brand, and 1/2 can coconut. Poke holes
in
cake(after it has cooled) Pour this mixture on top of cake.
Spread Cool Whip and the rest of the coconut on top.

Willie, I really enjoy the recipes at this site. Here is one of
my
favorite broccoli salad recipes that I'd like to share. This has
been a great hit with my family, friends and coworkers.
Broccoli Salad
1 bunch broccoli (cut into small pieces)
1 cauliflower (cut into very small pieces. You may wish to use ½ if
you've chosen a large one.)
1 medium onion (Red or Yellow. You may wish to only use ½ )
12-15 slices of bacon
1 cup raisins
½
cup sunflower kernels (add more if you like)
Dressing
1 cup mayonnaise
¼
cup sugar
4 tablespoons of white distilled vinegar
Fry bacon to very hard crisp. Allow to cool. Then crumble into small
pieces. (Note: If bacon is not fried to crisp, it will not crumble
properly.) Set aside.
Mix broccoli, cauliflower, onion, raisins, sunflower kernels, and
bacon in large bowl.
Mix mayonnaise, sugar and vinegar in small bowl. This is your
dressing. Mix very well until smooth.
Add the dressing to the salad and toss well. You may need to make
a
little extra dressing depending on how much you actually make.
Allow to chill. Toss once more just before serving.
Enjoy!

Willie,
Someone posted a home remedy for a cold that contains Pennyroyal.
I
think it should be noted somewhere that people who are pregnant should
NEVER use Pennyroyal. It can cause miscarriages - I know from
experience. Just thought I should bring that to your attention since
there are some remedies being posted on your site.

Hot Cocoa
1/2 cup sugar
1/4 cup HERSHEY'S Cocoa
Dash salt
1/3 cup hot water
4 cups (1 qt.) milk
3/4 teaspoon vanilla extract
Miniature marshmallows or sweetened whipped cream (optional)
1. Stir together sugar, cocoa and salt in medium saucepan; stir
in
water. Cook over medium heat, stirring constantly, until mixture
comes to a boil. Boil and stir 2 minutes. Add milk; stirring
constantly, heat to serving temperature. Do Not Boil.
2 Remove from heat; add vanilla. Beat with rotary beater or whisk
until foamy. Serve topped with marshmallows or whipped cream, if
desired.
Five 8-oz. servings.

Subject: Yeast Rolls w/ Potato Flakes
YEAST ROLLS
1/2 c. warm water
1 c. milk
1/2 c. sugar
1/2 c. shortening
3/4 tsp. salt
1/2 c. water
1 egg
2 pkg. yeast
3/4 c. potato flakes
4 c. flour
1/2 tsp. soda
1/2 tsp. baking powder
1/4 tsp. ginger
Dissolve yeast in warm water. Scald milk and add sugar, shortening
and
salt. Cool. Add water and beaten egg. Add yeast. Mix in potato flakes.
Add flour, soda, baking powder
and ginger. Mix well. Cover and let rise until double.
Punch down. Knead 3 to 5 minutes and shape into balls.
Place side by side in cake pan. Bake in 450 degrees oven until golden
brown for 15 to 20 minutes.

Subject: HOMEMADE BUTTERMILK
Buttermilk
If a recipe calls for buttermilk and you don't have any on hand
you
can also use regular milk. Just add one Tablespoon of white vinegar
or lemon juice to one cup of milk and let stand 5 minuets.

OLD-FASHIONED HARD CANDY
2 C. sugar
1 C. water
2/3 C. light corn syrup
1 tsp. oil flavoring*
Food coloring as desired
Confectioners' sugar
* Oil flavoring can be purchased at drugstore or baking supply shop.
Mix sugar, water and syrup until sugar is dissolved. Boil on medium
heat to 300ºF or hard ball stage.
Remove from heat. Add flavoring and food coloring and mix well.
Odor
will be extremely strong at this time, so prepare in well-ventilated
kitchen. Pour in streams onto cookie sheet which has been very
generously covered with confectioners' sugar. Make little ditches
of
confectioners' sugar so the candy does not spread too much. Sift
more
confectioners' sugar on top of candy streams. Cut with scissors into
bite-size pieces as it begins to cool and outer edge will hold its
shape. Do not wait until it is completely cooled, because it becomes
hard and impossible to cut. Yields 1 pound.

Pickled Bologna
Bologna
2 quarts vinegar
4 onions, sliced
8 bay leaves
1/2 tsp. black peppercorns
1/2 tsp. whole allspice
1/2 to 1 hot pepper
Takes about 3 rings of bologna, depending on size. Combine all the
ingredients (except bologna) and heat to boiling. Add bologna and
return to boiling. Put in gallon jar; takes at least one week to
be
real good.

Bologna Cake
1 1/2 lb. bologna
2 (8 oz.) pkg. cream cheese
Get 1 1/2 pounds bologna sliced 1/2-inch thick. Take 1 piece of
bologna and cover with a layer of cream cheese, lay another piece
of
bologna on top of first piece. Then cover second piece with cream
cheese, continue to do this until all 1 1/2 pounds are layered in
the form of a cake. Then take remaining cream cheese and cover top
and sides, just like you were icing a cake. Chill, slice and serve
with crackers or chips.

Bologna Roll-ups
You can substitute sliced ham for the bologna.
6 to 8 slices bologna
8 oz. cream cheese, softened
Long, thin dill pickle sticks
Spread bologna slices with cream cheese. Put pickle near one end
and
roll bologna around the pickle. Use toothpicks, if needed, to keep
it rolled.
Slice a half-inch thick and serve. I love these!

Bologna Stew
2 cups Chunk Bologna, in 1-inch cubes
2 cups cubed potatoes
1 cup slices carrots
2 cans beef broth + 2 cans water
Salt, pepper to taste
Mix all ingredients and simmer on low until taters are tender.

Bologna Spaghetti
1 cup cubed bologna
1 jar Ragu spaghetti sauce (traditional flavor)
Spaghetti, cooked and drained
Lightly fry the bologna and then add to the Ragu spaghetti sauce;
heat
through. Serve over spaghetti.

Bologna Nachos
1/2 cup diced bologna
1 can refried beans
1 chopped tomato
Sour cream
Nacho chips
Chopped black olives
2 cups shredded cheese
Preheat oven to 350º. Spread nacho chips out on cookie sheet
and cover
with shredded cheese. In a pot, heat beans and bologna. Stick chips
and cheese in oven for just a couple of minutes until cheese is
melted. Remove, cover with beans and bologna mixture and serve with
other stuff.

Bologna Pinto Casserole
1 cup cubed bologna
1 can or whatever you have of leftover pinto beans
Shredded cheddar cheese
Preheat oven to 350º. Mix together and place in casserole dish;
heat
in oven 20 minutes. Top with cheese, and place back in oven 5 minutes
or until cheese is melted.

Fried Bologna Sandwich
2 slices bologna
1 slice American cheese
mustard
2 slices white bread
ketchup
Fry bologna until lightly browned. Toast bread. Spread mustard,
ketchup over one side of each slice of toasted bread. Layer one
slice bologna, one slice cheese, and second slice of bologna.

Bologna-Cabbage Delight
1 lb. bologna, cut in 1/4-inch slices
1 small cabbage, shredded (about 8 c.)
4 potatoes, peeled, cut in 1/2-inch slices
4 carrots, thinly sliced
2/3 cup chicken broth
Salt, pepper, mustard to taste
Brown both sides bologna in Dutch oven over medium heat. Add cabbage,
potatoes, carrots, broth, salt and pepper. Stir with fork. Cover
and
cook over low heat 40 to 50 minutes until vegetables are tender.
Serve with mustard. Serves 4 to 6.

2 slices bologna
3 slices bacon (cooked)
1 wad of lettuce
1 or 2 slices tomato
2 slices bread
mayo
Slather the mayo on the bread, and pile up the fixin's.

Bologna Cheese ball
1/4 lb. bologna
3 oz. cream cheese
4 oz. Roquefort cheese
small onion
Chop bologna and onion finely. Mix with cheeses and chill until
firm.
Roll in paprika and refrigerate.

Fried Bologna Biscuit
2 or so slices of bologna
Biscuits
Mustard
Fry bologna, place on biscuit, dab with mustard and you're set to
go.

-1 teaspoon baking powder and 1/2 teaspoon salt.start with eggs and
butter at room tempature.
mix butter and shortening until fluffy add sugar and eggs. beat
until
it looks like whipped cream add flour and milk and flavorings bake
in large tube pan for 2 hours at 300 degrees . start off in cold
oven.
this cake is very good the next couple of days if it lasts that long
my family loves it.
(sift flour and salt and baking powder together before you start)
you can use flavoring of your choice up to 5 different ones////enjoy

best pound cake you've ever tasted!!
Cream Cheese Poundcake
8oz cream cheese
3 cups flour
3 cups sugar
3 cups butter/margarine (both equally as good)
6 eggs
1 tsp baking powder
1/2 tsp salt
cream butter, cream cheese together; add eggs one at a time.
mix together dry ingredients and add to creamed mixture.
Pour into greased bundt pan bake at 350 for l l/2 hours. Cool 20
minutes in pan then remove to rack.
Enjoy!!

Subject: Cookies
Cake Mix Cookies
Makes 4-1/2 dozen
Ingredients:
2 large eggs
1/3 cup oil
1 teaspoon vanilla or other flavor to match cake mix
1 box cake mix (enough to make a 2 layer cake)
Instructions:
Lightly beat together eggs, oil and extract in mixing bowl. Add
about
half of cake mix and beat by hand until smooth. Stir in remaining
cake mix until well blended. Drop cookie dough by rounded teaspoons
about 3 inches apart onto ungreased baking sheets. Bake in a
preheated 375°F. oven 10-12 minutes.
Note: The centers will be soft. Let cookies cool briefly before
transferring to racks.
To make Chocolate Chip cookies, add 6 oz. semi-sweet chocolate pieces
to dough when you add second half of the mix.
