Subject: Banana Pudding made from scratch and Sausage and
Black-eyed Peas Casserole

Banana Pudding

3 eggs, separated
2 cups milk
1 cup sugar
*1/4 cups self-rising flour
1/3 stick margarine or butter
1 tsp vanilla
3 bananas, sliced
Vanilla Wafers

Place egg yolks in a bowl and beat until turns a lighter color. 
Add milk and 1/2 cup sugar. Mix well. Mix flour and 1/2 cup
sugar together well; add to egg, milk and sugar mixture, mix
well. Place in a double saucepan and stir well. Cook stirring
frequently to prevent lumps. When pudding is almost as thick as
you desire, add butter or margarine. Let continue to cook, until
desired thickness is reached and add vanilla and mix well, remove
from heat and set aside.
In a 2 1/2 to 3 quart casserole or baking dish, line bottom and
sides with vanilla wafers, then a layer of sliced bananas on top
of vanilla wafers on the bottom. Pour 1/2 of pudding over this. 
Add another layer of vanilla wafers and bananas, then pour
remaining pudding over bananas and vanila wafers. Set aside.

Meringue

Place egg whites in a glass mixing bowl. With an electric mixer,
beat egg whites until peaks. Add 1/2 cup sugar, and 1/2 teaspoon
vanilla. Beat well, and peaks. Spread over pudding and place in
a preheated 325 degree oven until lightly brown. Keep a close
check on it as you do not want it to get too brown or burn.

*You may use more flour if more thicker pudding is desired.

Sausage and Black-eyed Pea Casserole

1 pound smoked sausage, sliced in 1/4 inch thick slices
1 large onion, cut into short, thin strips
2 large green peppers, cut into short, thin strips
3 Tbls. vegetable oil
1 16 oz. can tomatoes and green chilies
2 16 oz. cans black-eyed peas, drained
1 cup corn muffin mix
1/4 tsp. ground cayenne pepper
2/3 cup milk
1 egg, beaten

Preheat oven to 400 degrees. In large skillet over medium heat,
cook sausage, onion and green pepper in 1 tablespoon oil until
vegetables are tender and sausage is done. Stir in tomatoes and
drained peas; reduce heat and simmer 5 to 10 minutes. Pour into
lightly sprayed (cooking spray) 13-by-9-by-2-inch baking dish. 
In a small bowl, combine corn muffin mix, cayenne pepper, milk,
egg and remaining 2 tablespoons vegetable oil. Stir until
smooth. Pour over sausage mixture. Bake 25 to 30 minutes or
until golden brown. Serves 4 to 6.

Note: For more spice to this dish, add a splash of hot sauce.

Subject: Scalloped Pineapple

Scalloped Pineapple

2 cans crushed pineapple, undrained
2 cups sugar
1 can chunk pineapple, drained
3 eggs
4 cups bread crumbs
2 tbs. milk
2 sticks butter

On low speed, mix crushed pineapple with juice, bread crumbs,
butter, sugar, eggs, and milk. Stir in chunk pineapple. Cook 
uncovered 1 1/2 hours at 350 deg. or until golden brown. Serve 
hot or cold as a casserole, or as dessert with ice cream.

Subject: Sweet Potato Brownies

Sweet Potato Brownies

1/2 cup butter
2 cups sugar
1 cup mashed, cooked sweet potatoes (can use canned)
1 tsp. vanilla
4 eggs
1 1/2 cups flour
2 tsp. cinnamon
powdered sugar (optional)

Cream butter and sugar; add sweet potatoes and vanilla and mix
well. Add eggs, 1 at a time, mixing well. Add flour and cimmamon, 
add to sweet potato mixture and mix well. Pour into greased pan . 
Bake at 300 deg. until brownies test done, about 1 hour. Sprinkle
with powdered sugar.

Subject: Magic Peach Cobbler

Magic Peach Cobbler

1 Cup Baking Mix (Bisquick)
3/4 Cup Sugar
3/4 Cup Milk
3/4 Stick Margarine (6 Tbsp.)
2 Cups Peaches (29 oz.) Can, Undrained
3 Tsp. Tapioca
1/2 Cup Sugar

Melt 3/4 stick margarine in an 11' x 7' x 2' pan in warm 375 deg.
oven.
While margarine is melting, mix 3/4 cup sugar, Bisquick and milk.
Remove pan from oven and pour Bisquick mixture over the melted 
margarine. Do not stir.
Stir the tapioca into the undrained peaches and pour on top. do
not stir.
Sprinkle the 1/2 cup sugar on top. DO NOT STIR. Bake 30 minutes
in a 375 deg. oven.

Subject: Marshmallow Brownies

Marshmallow Brownies

1 cup (6 oz.) butterscotch chips
1/2 cup butter or margarine
2 eggs
2/3 cup packed brown sugar
1 tsp. vanilla extract
1 1/2 cups all purpose flour
2 tsp. baking powder
1/2 tsp. salt
2 cups miniature marshmallows
2 cups (12 oz.) semisweet chocolate chips
1/2 cup chopped walnuts

In a sauce pan over low heat, melt butterscotch chips and butter;
cool for 10 minutes. In a mixing bowl, beat eggs, brown sugar 
and vanilla. Add butterscotch mixture; mix well. Combine flour,
baking powder and salt; add to batter and mix well. Stir in 
marshmallows, chocolate chips and nuts.

Spread into a greased 13 in. by 9 in. by 2 in. baking pan. Bake
at 325 deg. for 25-30 minutes, or until brownies test done with 
a toothpick. Cool before cutting. Yield 3 dozen.

Savory Beef Stew

1-1/2 lb. boneless beef sirloin steak, cut
into 1-1/2 inch cubes
1 Tbsp. flour
2 cups onion wedges, 1/4 inch thick
2 cups red and green peppers, cut
into 1-inch pieces
3 Tbsp. margarine or butter
1 cup A.1. Steak Sauce
1/2 cup beef broth
1/4 cup dry red wine
Hot cooked White Rice

TOSS meat with flour to coat; set aside.
COOK onions and peppers in 1 Tbsp. margarine in large heavy pot
on] medium-high heat just until tender; remove onion mixture from
pot.
BROWN meat in batches in remaining margarine in same pot.
Return meat and onion mixture to pot. Stir in steak sauce, beef 
broth and wine. Bring to boil; reduce heat to low. Simmer 30
minutes or until meat is tender. Serve over rice.
Serves: 6

Johnny Cake

7/8 cup flour
3 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup yellow cornmeal
1/3 cup brown sugar
1 egg, well beaten
7/8 cup milk
5 tablespoons melted butter or shortening

Grease an 8 inch square cake pan. Preheat oven to 400 degrees F.
Mix the flour, baking powder, salt, cornmeal and brown sugar
together
Combine the egg, milk and butter. Make a well in the dry
ingredients, pour the milk mixture over and stir quickly only 
enough to blend. Turn into prepared pan.
Bake for 20 to 25 minutes. Serve warm.

How to eat,,,,You get a cereal bowl, you take a square of cake.
You slice the cake square in half crosswise and lay the halves in
the bowl, cut side up. You spread butter over both halves and 
then top it all off with corn syrup.

Chocolate Fudge Brownies

1 cup butter
6 squares unsweetened chocolate
4 eggs
2 cups sugar
1 tablespoon vanilla
1/2 cup flour
1 cup semi-sweet chocolate chips

Melt butter and chocolate together.
In a large bowl beat eggs. Blend in sugar. Add chocolate mixture
and vanilla. Stir in flour and chocolate chips.
Pour into a greased 8 inch square pan. Bake at 300 degrees F. for
45 to 55 minutes. Cool and cut into squares. Store in refrigerator

Subject: Chicken With Mushroom Sauce

Chicken With Mushroom Sauce

4 - 6 chicken breasts
1/4 cup flour
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 tablespoon olive oil
1 tablespoon butter
1 pound sliced mushrooms
1 cup chicken stock
juice of 1 lemon
1 cup white wine
1/4 teaspoon nutmeg
1/3 cup heavy cream
1 tablespoon chopped fresh parsley

Combine the flour, salt and pepper. Coat the chicken breasts with
flour mixture.
Heat the oil and butter in a large frying pan and brown the
chicken on both sides - about 10 minutes. Lower the heat and 
continue to cook the chicken until it is cooked and tender - about
20 to 30 minutes. Remove to a serving platter and keep warm.

Add the mushrooms to the pan, adding a little more butter if
necessary. Cook the mushrooms for about 5 minutes.
Add the stock, lemon juice, and wine to the pan and bring to a
boil, scraping any bits from the bottom of the pan. Continue
to cook for 3 to 5 minutes. Lower heat and stir in the cream and 
nutmeg. Continue to cook until the sauce is slightly thickened.

Pour sauce over top of the chicken on the serving platter and
sprinkle with parsley. Makes 4 to 6 servings.

Subject: Easy Sticky Pecan Rolls

1 package 24 frozen rolls (Rich's) or bread dough
1 - 4 oz. package butterscotch pudding (not instant)
3/4 cup (or more) chopped pecans
1/2 cup butter or margarine
1 tsp. cinnamon
3/4 cup brown sugar

Spread the nuts in a buttered 9 x13 pan. Distribute the rolls
over the nuts.
Melt the butter and mix in brown sugar and cinnamon and heat
until the sugar melts. Sprinkle the pudding over the rolls. Pour 
the butter mixture over the rolls. Cover the pan with a damp cloth. 
Set the pan in a cold oven overnight.

The rolls will have risen by morning. Bake in a 350 degree oven
for 30 minutes. Turn the pan over on a cookie sheet so the nuts 
will be on top.
Serve.
