Subject: Beef Noodle Soup
Beef Noodle Soup
1 pound beef stew or stir fry meat
1 cup onion, chopped
1 cup celery, chopped
1/4 cup beef bouillon granules
1/4 teaspoon dried parsley
1 pinch pepper
1 cup carrots, chopped
5 3/4 cups water
2 cups egg noodles, cooked according to package directions
In dutch oven or soup pot saute meat, onion and celery over medium
high heat for about 5 minutes or until meat is browned on all sides.
Stir in bouillon, parsley, pepper, carrots, water and egg noodles.
Bring to boil; reduce heat to low and simmer for 30 minutes.

Subject: Potato Chip Cookies
Potato Chip Cookies
These delicious cookies are crunchy on the outside and chewing on
the
inside. Make sure you leave a few inches between cookies because
they
spread. This recipe only makes about 2 dozen
1 cup brown sugar
1/2 cup butter or margarine
1 egg
1 cup flour
1/2 teaspoon baking soda
1/2 teaspoon vanilla
1/2 cup potato chips, crushed
1/2 cup peanuts, chopped
Preheat oven to 350 degrees. Cream sugar, butter or margarine and
egg. Blend in flour, baking soda and vanilla. Mix well. Stir in
chips and nuts. Drop by heaping teaspoonfuls onto un-greased cookie
sheet and bake for 10 to 12 minutes until browned.

Subject: Popeye Spinach Balls
Popeye Spinach Balls
This can be used as a side dish or appetizer. ;~)
1 medium onion, chopped
2 (10 ounce) packages frozen spinach, thawed and drained well
3/4 cup better or margarine, melted
2 cups herb-seasoned stuffing mix
1 teaspoon garlic salt
1/2 cup Parmesan cheese
1/4 teaspoon pepper
2 eggs
Preheat oven to 325 degrees. Mix all ingredients together in large
bowl. Shape into 1 inch balls. Place on cookie sheet and bake
for 20 minutes. Can be made ahead and frozen.

Saw this recent article and thought it was important for those that
prepare and eat chitterlings....especially preparing for children.

Proper Cleaning of Chitlins is Crucial to Avoid Illness
Every year in Georgia, some 40 to 50 people, mostly infants, are
sickened by bacteria from raw chitterlings. The pork intestines,
a holiday favorite for many African-Americans, often carry germs
that can cause severe diarrhea even in those who don't eat
chitlins. The germs spread while chitlins are being cleaned, a
process that can take four hours or more.
"Most people are very aware that they need to carefully clean
chitlins
before they cook them, but they're not as aware that when they're
cleaning them their hands can be contaminated and spread the germs
to
pacifiers and baby bottles," says Stephanie Bialek, a medical
epidemiologist with the Georgia Division of Public Health.
To reduce the risk, the health department recommends boiling raw
chitlins for five minutes before cleaning them to kill germs that
can spread around your kitchen. It doesn't change the taste, and
makes them easier to clean.
Other advice: Wash hands after touching raw chitlins and before
touching anyone or anything else; and clean everything in the
kitchen that raw chitlins have touched, using a solution of 1
tablespoon of bleach in a gallon of water.

Olive Potato Salad:
- 6 medium potatoes
- 1 cup stuffed olives, quartered
- 2 hard-cooked eggs, chopped
- 1/4 cup diced celery
- 2 Tbs finely diced onion
- 1/3 cup thick cream
- 1/4 cup vinegar
- salt to taste
Boil potatoes until tender; drain and cool. peel and cube. Add olives,
eggs, celery and onion. Mix cream and vinegar; scald. Add to potato
mixture; mix well. Salt to taste. Yield 8 servings

Barbecue Salad:
- 12 medium ripe tomatoes, chopped
- 8 medium onions, chopped
- 2 red peppers, chopped
- 6 green peppers, chopped
- 1 cup sugar
- 1 cup vinegar
Combine all ingredients in saucepan; cook for 1 hour or until
thickened.

and other pharmacies. Look for it near lotions,
usually next to glycerin and rosewater lotion. Good luck.

Subject: Broccoli Casserole
just made this today!
2 pk frozen broccoli cooked
1 can cream of celery soup
1 stick butter/margarine, melted
1 sleeve ritz crackers, crushed
2 cups chedder cheese, shredded
layer broccoli in 13 x 9 pan. sprinkle with cheese. mix ritz crackers
with butter. spoon over top of broccoli and cheese mixture. spoon
celery soup over all. bake at 350 degrees for 30 minutes. PS i have
also used cream of mushroom soup and it is just as great!

the berries are out of season, I bought a mixed bag of
frozen blackberries, blueberries and raspberries.

I enjoy making homemade buttermilk biscuits, but i have a rather
important question.........
1)After sifting the dry ingredients and making the well, how do i
pour
in my buttermilk and the (vegetable) oil? How do i mix it w/ my
hands.
This is how my mother in law does her's and taught me, but i'm missing
something because my biscuits, although they rise, their not like
grandma's, light and fluffy. Their heavy and fluffy.
2) What kind of oil is better to use, canola, blend, etc?
3) I store my flour in the pantry, is that good?

Nine Day Slaw:
- 1 quart grated cabbage
- 3 medium onions, grated
- 2 green peppers, grated
- 1 1/2 cup vinegar
- 1 1/2 cup sugar
- 1/2 tsp celery seed
- 2 tsp. dry mustard
- 1/2 tsp turmeric
Combine cabbage, onions and green pepers. Mix remaining ingredients;
bring to a boil. Pour over cabbage mixture. Chill. Will keep for
several days. Yield: 20 servings

- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 3/4 tsp salt
- Dash of pepper
- 4 cups shredded cabbage
- 1 8 ounce can whole kernel corn, drained
- 1/4 cup chopped green pepper
- 1/4 cup chopped pimiento
Combine mayonnaise, sour cream, salt and pepper. pour over combined

~Southern Sweet Potato Bread with
Pecans~
A fragrant southern style quick bread. Perfect for the holidays.
Makes 1 loaf (12 servings).
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
1 cup white sugar
2 eggs, beaten
1/2 cup vegetable oil
2 tablespoons milk
1 cup cooked and mashed sweet potatoes
1 cup chopped pecans
1/2 cup golden raisins
Directions
Preheat oven to 325 degrees F ( 165 degrees C ).
Grease an 8x4 inch loaf pan.
In a medium bowl, stir together the flour, baking powder, salt,
nutmeg
cinnamon, and sugar. Add the eggs, oil, and milk; mix until well
blended. Finally, stir in the mashed sweet potatoes, pecans, and
golden raisins.
Pour the batter into the prepared pan and bake for 70 minutes or
until
a toothpick inserted comes out clean.
Allow bread to cool in the pan at least 15 minutes before removing.
For best flavor, store overnight before serving.

Subject: Green Bean Casserole
Green Bean Casserole
2-14.5 oz can french cut green beans, drained
2-10 1/2 oz can cream of mushroom soup
1/4 cup milk
1-3 oz can french fried onions
1-4 oz can mushroom pieces (optional)
Mix together green beans, mushroom soup, milk and mushrooms in a
small
casserole dish. Divide the can of onions in half, crush half and
mix
with green bean mixture. Bake in a 350° oven for about 45 minutes.
Place the rest of the onions on top and return to oven for 10 more
minutes.

Chicken with Mushrooms 4 servings
INGREDIENTS
2 cups sliced fresh mushrooms
1 cup dry white wine or chicken broth
1 clove garlic, minced
1 teaspoon dried basil, crushed (or to taste)
2 cups cubed cooked chicken or turkey (11 oz.)
1 14-ounce can artichoke hearts, drained and cut into wedges
1 cup skim milk
3 tablespoons all-purpose flour
1/8 teaspoon salt
1 tablespoon snipped fresh parsley
Dash pepper
DIRECTIONS
In a 2-quart casserole combine mushrooms, wine, garlic, and basil.
Cook, covered, on 100% power (high) for 3 to 4 minutes or till
mushrooms are tender, stirring once. Stir in chicken and artichoke
hearts.
In a small bowl stir together milk, flour, salt, and pepper. Stir
into casserole. Cook, uncovered, on high for 6 to 9 minutes (12 to
14
minutes in low-wattage ovens) or till thickened and bubbly,
stirring after every minute. Cook 1 minute more. Sprinkle with
parsley.
