I looking for a recipe where you put a prime rib in the oven for
45 minutes then turn oven off. After that you insert meat
thermometer in thickest part or roast turn back on until the
roast reach 145 in center.

Subject: Fried cabbage

Shred cabbage like you would for cold slaw. In a large pan, fry
about 6 pieces of cut up bacon. After the bacon is just about
done, but still soft, add the cabbage and stir to coat well is
the bacon drippings. After the cabage becomes limp, splash a
good splash of vinegar(I generally use apple cider vinegar for
this, but white vinegar will work well too). Place a lid on
top of the pan and simmer for just a few minutes. Yummmy

Subject: Corn Pone

Corn Pone
1 cup flour
1 cup yellow cornmeal
1/2 teaspoon salt
1 egg
1 cup milk (or use water)
2 teaspoons baking powder
Heat skillet, add 1 1/2 tablespoons cooking oil until hot enough that
a drop of batter bubbles immediately. Mix flour, cornmeal, salt, egg,
and milf or water until smooth with no lumps. Place a spoonful in 4 or
5 places in a hot skillet. Let brown, then turn over like a pancake
and brown on the other side. Serve with butter and honey.

Subject: Cool 'N Creamy Chocolate Pie


Cool ‘N Creamy Chocolate Pie

1 pkg (3 oz.) cream cheese, softened
1/4 cup sugar
1 tsp vanilla
1/2 cup Hershey’s Chocolate Syrup
1 cup (1/2 pt) cold whipping cream
1 pkg graham cracker crust (6 oz.)
sliced fresh fruit or chocolate curls for decoration (optional)

1. Beat cream cheese, sugar and vanilla in medium bowl until well
blended. Gradually add syrup, beating until smooth.
2. In another bowl, beat whipping cream until stiff. Carefully fold
into chocolate mixture. Pour into crust.
3. Cover; freeze until firm, about 3 hours. Just before serving,
garnish with fruit and chocolate curls, if desired. Makes 6 to 8
servings.

Subject: Fried Peach Pie request for Linda Turner

For Linda Turner:
PIE CRUST FOR FRIED PIES

2 c. plain flour
1/2 c. Crisco (not quite 1/2 c.)
1/2 tsp. salt
1/2 tsp. soda
1 Tbsp. sugar
1 Tbsp. vinegar
1/2 c. water
Makes 10 pie crusts.

PEACH FRIED PIES
2 (6 oz.) pkg. dried peaches
1/2 c. sugar
2 Tbsp. fresh lemon juice
1/2 tsp. ground cinnamon
1/2 tsp. ground nutmeg
egg pastry
vegetable oil
Cook peaches according to package directions; drain and mash. Combine
with sugar, lemon juice and spices. Roll out pastry. Cut into 5-inch
rounds. Place 3 tablespoons of peach filling on half of each round.
Moisten edges with water. Fold in half, pressing edges together with
fork to seal. In skillet, fry pies in 1-inch of hot oil at 375
degrees until golden brown on each side, turning only once. Drain well
on paper towels.

Subject: Marinade

Deep-Fried Turkey Marinade
Makes 3 cups

This rub is appropriate for a 12 to 14 pound turkey.

Ingredients

1 (16 ounce) bottle Italian dressing
1/2 cup cayenne pepper
1/2 cup black pepper
1 cup Creole seasoning
2 tablespoons garlic powder

Directions

1. In a medium bowl, mix 3/4 Italian dressing, cayenne pepper, black
pepper, Creole seasoning, and garlic powder. Rub over turkey, using
remaining Italian dressing to fill cavity. Allow turkey to marinate
8 hours, or overnight, before deep-frying as desired.

NOTE: Only oils with high smoke points should be used including
peanut, canola and sunflower. You might check the prices at the
grocery warehouse stores as their product line typically includes
large 25-pound containers of oil. Or you might combine peanut oil
with one of these other high smoke point oils to reduce the cost.

Hello,
having a club meeting of approximately 22 ladies. have a chef but
no menu. want to do something simple, but tasteful. any suggestions?
most of them will eat anything! (we're not watching calories, but

Subject: Diabetic Buttermilk Cookies

MMMMM----- Meal-Master Recipe

Title: Vera's Buttermilk Cookies (Diabetic)

1/2 c Margarine; (1 stick)
2 c All-purpose flour
2/3 c Sugar
2 tb Dry Buttermilk
Dry sugar substitute equal
1 ts Baking soda
1/4 c sugar
1/4 ts Salt
1 Egg; (large)
1/3 c Water at room temperature
1 ts Vanilla

Cream margaring, sugar, and dry sugar substitute together at
medium speed untill light and fluffy. Add egg and vnill and mix
at medium speed for 30 seconds, scraping down the bowl before and
after adding the egg and vanilla. Stir flour, dry buttermilk,
baking soda and salt mixture, along with water, to creamy
mixture, and mix at medium speed to blend well. Drop dough by 1
1/2 tablespoonfuls onto coolie sheeet that have been sprayed with
pan spray orlined aluminum foil. Press cookies down on the
bottom. Remove them to a wire rack and cook to room temperature.

Food exchanges per serving: 1 STRACH/BREAD EXCHANGE + 1 FAT

Title: Turkey Spaghetti Sauce

1/4 c Onion; chopped
1 ts Dried basil
1 Garlic clove; minced
1 ts Dried thyme
1 ts Olive oil
3 c Chopped cooked turkey
28 oz Can tomatoes; cut up
Cooked noodles or macaroni
6 oz Can tomato paste

Saute the onion and garlic in the oil until lightly browned. Add
the tomatoes, tomato paste, basil, thyme and turkey. Simmer for
20 to 25 minutes while cooking the noodles or macaroni.

1/6 recipe not including noodles - 215 calories, 3 lean meat, 2
vegetable exchanges 9 grams carbohydrate, 22 grams protein, 10
grams fat, 190 mg sodium, 627 mg potassium, 54 mg cholesterol.

Coca-Cola Cake With Pecan Icing

2 sticks butter
1 cup Coca-Cola
2 tablespoons cocoa
2 cups all-purpose flour
1 3/4 cups sugar
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup buttermilk
2 large eggs
1 teaspoon vanilla extract

Shortening and flour (to grease and flour cake pans)
Preheat oven to 350 degrees. In a large saucepan, melt butter over
medium heat. Add cocoa and Coca-Cola and bring to a boil, stirring
often. Remove from heat.
Sift dry ingredients into the saucepan. Stir until incorporated. Add
the buttermilk, eggs, and vanilla extract and mix well. Pour into two
greased and floured layer pans (or three for thinner layers). Bake for
30 minutes or until a knife inserted in the center comes out clean.
Let cool completely before removing from pans.

Pecan Icing:
1 stick butter
2 tablespoons Coca-Cola
2 tablespoons cocoa
1 lb. box confectioner's sugar
1 cup chopped pecans
1 teaspoon vanilla extract

As with the cake, melt butter in a large saucepan, add cocoa and
Coca-Cola, and heat to a boil over medium heat, stirring often. Remove
from heat and cool slightly. Sift in sugar and stir until
incorporated. Stir in pecans and vanilla. Let cool enough to be fairly
thickened, then ice the cake.

Subject: Strawberry Pound Cake

Strawberry Pound Cake

1 box white cake mix
1 pkg strawberry jello (small)
3/4 cup oil
4 eggs
1 box strawberries (small)
3 tbsp self rising flour
1/2 cup of water

Mix cake mix, flour and jello. Add oil. Beat in the 4 eggs. Add 1/2
cup water with 1/2 of the strawberries.

Beat and bake at 350 degrees for 35 to 40 minutes.

Icing:

2 cups powered sugar
1/2 stick butter and the rest of the strawberries

Mix together the sugar, butter and the rest of the strawberries. Ice
the cake with this mixture.

Subject: Pork Chops Smothered in Onions

Pork Chops Smothered in Onions

12 centercuts
Hot and spicy, garlic salt, black pepper, and paprika
Flour
Approximately 1/3 cup of vegetable oil
1 cup of boiling water
1 chicken bouillon cube
1 teaspoon of parsley flakes
1 teaspoon of celery seed
4 big onions, sliced into rings

Season chops with all spices, but only on one side. Brown the chops
in hot oil in a large skillet or pot. Dissolve the cube in water.
Add parsley flakes and celery seed to bouillon. Once all of the chops
have been browned, smother each chop with lots of onion rings in
skillet. Carefully pour bouillon over and around chops.
Bring skillet to a boil. Cover, simmer for 1 hour. Serve with wild
rice and or mashed potatoes.

Ma Lynn's Collard Greens and Turkey Quiche
recipe of Fran Thomas, Betty Crocker 1st place winner, 2001, 'Recipes
from the Soul'

1 1/2 cups cooked collard greens, chopped and drained*
2/3 cup chopped cooked turkey
1 1/2 cups shredded sharp Cheddar cheese (6 ounces)
2 eggs, slightly beaten, or 1/2 cup fat-free cholesterol-free egg
product
1 cup heavy (whipping) cream
1/2 teaspoon salt
1/8 teaspoon pepper

Heat oven to 350°. Make Flaky Pastry Shell. Arrange collard greens and
turkey in shell. Sprinkle with 1 cup of the cheese. Beat eggs, cream,
salt and pepper, using fork. Pour into shell. Sprinkle with remaining
cheese.

Bake 40 to 45 minutes or until tip of knife inserted in center comes
out clean. Let stand 20 minutes. Cut into wedges. Serve warm or cold.
Cover and refrigerate any remaining quiche. 4 to 6 servings.

*1 package (9 or 10 ounces) frozen collard greens, cooked and drained,
or 1 1/2 cups canned collard greens, drained, can be used instead.

Flaky Pastry Shell
1 1/4 cups Gold Medal® flour
1/4 teaspoon salt
1/4 cup firm butter or margarine
2 tablespoons shortening
1 egg, slightly beaten
1 to 2 tablespoons cold water

Stir together flour and salt. Cut in butter and shortening until
mixture looks like course crumbs. Stir in egg and cold water until
pastry clings together. Shape into a ball; flatten. Roll between
sheets of waxed paper or plastic wrap. Peel off top sheet. Turn into
ungreased 9-inch pie plate or quiche pan. Remove other sheet. Fold and
flute edge.

Tip: This quiche will serve 6 as a cold breakfast course or 4 as a hot
main course.
