Gina's Bean Salad

1 Can Red Kidney Beans
1 Can Cut Green Beans
1 Can Garbanzo Beans
1 Can Wax Beans
1 Large Red Onion, Peeled and sliced thin
1 Large green & red pepper
1/2 Cup Sugar


3 Tsp. Salt
1 Tsp. Pepper
1/2 Cup cider vinegar
1/2 Cup Oliver or Wesson Oil


Open and drain all beans and combine. Add onion and bell peppers in a
large bowl. Sprinkle with sugar, salt and pepper. Drizzle vinegar and
oil over the top. Toss slightly to mix. Chill overnight. Next morning
drain and serve on lettuce or in bowl. This is a much requested
recipe. Great for picnics, potlucks and I even had a friend who served
this at her daughter's wedding. The best part is you make it the day
before.

I GARNISH WITH SLICED RED AND GREEN PEPPERS.

Hi,

This is a family favorite and very yummy. If you like Pork Chops you
will love these and even some who did not like the chops really liked
these.

Start them before you go to work and they will be done when you get
home if you put your crock pot on low.

CHICKEN LICKEN PORK CHOPS

4 TO 6 LEAN PORK CHOPS
1/4 " THICK, BONE IN.
1/2 CUP FLOUR
1 TABLESPOON SALT
1 1/2 TEASPOONS DRY MUSTARD
1/2 TEASPOON GARLIC POWDER
1 CAN CHICKEN WITH RICE SOUP


Mix dry ingredients together in a bowl. I usually sift the
ingredients together so they are mixed well.
Wash pork chops in cold water and then coat with
the above mixture.
Heat oil in skillet, place pork chops in skillet and brown.
Then place browned pork chops in crock pot on low.
Pour chicken with rice soup on top of chops.
Cook 6 to 7 hours on low .

Note: I also make instant rice that I cook in chicken broth.
When the pork chops are done, I spoon one large ladle of
White rice on plate and place the pork chop on top of
the rice. This is great served with a jello salad, corn
and our favorite is asparagus or mini green peas.

People flock to this diner to have his Chicken Soup. Just try this and
see if it is not the best Chicken Soup you have tasted.

Subject: Chicken Soup from Mel's Diner in Texas...ommmm gooooood


This rich soup is from Mel's Dinner in Wheeler, Texas.

Ingredients:
4 cooked chicken breasts or 4 C. chopped chicken
2 cans chicken broth
2 cans chopped tomatoes
4 Tbsp. chopped fresh cilantro
1 medium onion, sliced in rings and sauteed in butter
1/2 tsp. black pepper

Preparation:
Bring all ingredients to a boil. Simmer 45 minutes to 1 hour. Serve
soup over a thin layer of crushed taco chips in bottom of soup bowl.
Add grated Monterey Jack Cheese on top.

Here is a cookie that won the County Fair best of the best award,
received over 100 great reviews where I posted this the first time,
all recipes.com, ( you can go and read reviews if you wish), also when

have neighbors at your door with plate in hand. Enjoy.

Iced Pumpkin Cookies
Wonderful spicy iced pumpkin cookies that both kids and
adults love! Prep Time: approx. 20 Minutes. Cook Time:
approx. 20 Minutes. Ready in: approx. 1 Hour 20 Minutes. Makes
3 dozen (36 servings).

2 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/2 teaspoon salt
1/2 cup butter, softened
1 1/2 cups white sugar
1 cup canned pumpkin puree
1 egg
1 teaspoon vanilla extract

2 cups confectioners' sugar
3 tablespoons milk
1 tablespoon melted butter
1 teaspoon vanilla extract

Directions
1 Preheat oven to 350 degrees F (175 degrees C). Combine
flour, baking powder, baking soda, cinnamon, nutmeg, ground
cloves, and salt; set aside.
2 In a medium bowl, cream together the 1/2 cup of butter
and white sugar. Add pumpkin, egg, and 1 teaspoon vanilla
to butter mixture, and beat until creamy. Mix in dry
ingredients. Drop on cookie sheet by tablespoonfuls; flatten
slightly.
3 Bake for 15 to 20 minutes in the preheated oven. Cool
cookies, then drizzle glaze with fork.
4 To Make Glaze: Combine confectioners' sugar, milk, 1
tablespoon melted butter, and 1 teaspoon vanilla. Add milk as
needed, to achieve drizzling consistency.

Subject: Funnel cake with Lemon Icing

This was posted this summer. I printed it out to make for my nieces.
Thanks to whoever posted it. They are delicious.

1 egg
2/3 cup milk
1 1/3 cup sifted flour
2 tablespoon sugar
1/4 teaspoon salt
3/4 teaspoon baking powder
1 teaspoon baking soda

Beat the egg and add the milk. Sift the flour, salt, sugar, baking
powder, and baking soda together. Add the egg and milk mixture to this
and beat until smooth. Holding your finger over the bottom of the
funnel, pour some batter into the funnel. Drop batter into a pan of
hot
oil (375) swirling it into circles, from the center out. Make each
cake
six inches in diameter.
Fry until golden brown. Drain on brown paper and serve. Note Funnel
should have 5/8-inch opening. Serve topped with powdered sugar,
ice-cream or anything else that you can think of.

Lemon Icing

4 cups (loosely packed) powdered sugar
1 cup shortening
1/2 cup unsalted butter
3 tablespoon milk
1 tablespoon water
2 tablespoon lemon extract
zest of 1 lemon
pinch of salt
3-4 drops of yellow food coloring.

Using an electric mixer, combine all the ingredient. Mix until
moistened at low speed. Beat 2-4 minutes on high speed. Mix until
smooth
and creamy.

When I was stationed in Texas my favorite restaurant was Texas
Roadhouse. Now that I am back on the northeast I miss their delicious
rolls. Does anybody have the recipe or something similar? I would

I had a Corning wear pot explode on me while I was cooking beans on
the top of the stove. I had beans all over and down into the burners
of the stove. I bottom blew out. I too can not tell you the reason
that it happened. I did call the corning people and they could not
tell me why it happened the pot was new only used one other time
before that. They did replace the pot and said they were sorry about
what happened and glad no one got hurt. I did lose the best beans I
have ever made. Look for chips and cracks before using. If
you find any get ride of the pot, pan or whatever comes in contact
with heat.

2 eggs -- beaten
1 1/2 cups milk
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
2 cups cooking oil
In a bowl, combine eggs and milk. Sift together flour, baking powder
and salt. Add to egg moisture and beat with electric mixer until
smooth.
(Check to see if mixture flows easily).
In a large skillet heat oil to 360F. Covering the end of a small
funnel
with your finger, pour batter into hot oil in a spiral shape. Fry till
golden about 3 minutes) using tongs to turn. Cook 1 minute more. Drain
on paper bag covered with a paper towel. Sprinkle with cinnamon and
powdered sugar or serve with maple syrup. Delicious.

Funnel Cake
Try adding fresh fruit as a topping.
2 eggs lightly beaten
1 & 1/2 C of milk
1/4 C of packed brown sugar
2 C of flour
1 & 1/2 tsp of baking powder
1/4 tsp of salt
oil for deep frying

confectioner's sugar for dusting
Preparation: In a bowl, combine the eggs, milk & brown sugar. Combine
flour, baking powder & salt. Beat into egg mixture til smooth. In an
electric skillet or deep fat fryer, heat oil to 375°. Cover the bottom
of a funnel spout with your finger, ladle 1/2 C batter into funnel.
Holding the funnel several inches above the skillet, release finger &
move the funnel in a spiral motion til all of the batter is released
(scraping funnel with a rubber spatula if needed). Fry for 2 mins. on
each side or til golden brown. Drain on paper towels. Repeat with
remaining batter. Dust with confectioners' sugar & serve warm. (Note
that the batter can be poured from a liquid measuring cup instead of a
funnel.)

Bread Pudding W Rum Sauce

Ingredients 1 loaf French bread (several days old), about 25
ounces 1 quart milk 2 large cans Carnation milk (1 milk can of water)
6 large eggs
2-1/2 cups sugar 1-1/4 Tablespoons nutmeg 1/4 teaspoon salt 1-1/2
Tablespoons vanilla flavoring 1 teaspoon cinnamon 1 stick oleo, cut in
pieces 1/2 cup raisins Rum Sauce 1 box regular Jello vanilla pudding
mix 1/2 cup milk
1/2 stick oleo 1 Tablespoon rum flavoring Step 1: Mix together 1 quart
of milk, Carnation milk, 1 can water, oleo, sugar, salt and vanilla flavor and
heat until oleo is melted.
Step 2: Pull french bread apart in small pieces, sprinkle raisins over
bread.

Step 3: Beat eggs, nutmeg, and cinnamon in mixer for one minute.
Step 4: Mix milk mixture with egg mixture (mix well). Pour over bread
and let
stand about 10 minutes.
Step 5: Pour mixture in a 9 x 13-inch greased baking dish and bake at
350
degrees for 45 minutes or 1 hour or until knife blade comes clean.
Step 6: Rum SauceFollow directions on pudding mix box, adding 1/2 cup
more milk.
Step 7: After cooking, add 1/2 stick oleo and 1 Tablespoon rum
flavoring.
Step 8: Pour rum sauce over bread pudding and serve.

Rum Croissant Bread Pudding 2 Tablespoons Butter
2 cups whole milk
2 cups heavy cream
4 large eggs
1/2 cup firmly packed brown sugar
1/3 cup dark or light rum
1 1/2 teaspoons pure vanilla extract
1/2 cup pecan halves
5 large stale croissants cut into thirds -- horizontally
Fantasy Cherry Sauce
Grease the cookery insert of a slow cooker generously with the butter.
Combine the milk, cream, eggs, sugar, rum, vanilla and pecans in a
large bowl and stir well to combine. Divide the croissant slices evenly into four
piles. Place one pile in an overlapping fashion in the bottom of the slow
cooker. Pour in one third of the milk mixture. Add another layer of
croissants, then another third of the liquid. Repeat one more time, finishing with a
layer of croissants. Cover, set on high, and cook for 1 hour, then reduce the
heat to low and cook until the custard is set and an instant read thermometer
inserted in the center registers 190 degrees F. Serve hot or at room
temperature with fantasy cherry sauce.

Cream Rice Pudding
3 tablespoons rice
1 tablespoon sugar
1 quart milk
1/2 teaspoon salt
1/2 teaspoon cinnamon or nutmeg

Wash the rice thoroughly, add the other ingredients and pour into a
greased baking dish. Bake for three hours in a slow oven, stirring several
times during the first hour. The mixture should not boil. Serve either hot
or cold. One-half cup of raisins may be added, if desired.

Custard Rice Pudding Recipe

1/4 cup of rice

1 egg and 1 yolk

1 cup of milk

1/3 cup of milk

1/3 cup of sugar

1/2 teaspoonful of mace or nutmeg

1/4 cup of raisins or currants



Blanche the rice, then cook till tender in the cup of milk; add the
fruit, the egg, beaten and mixed with the sugar, the spice and half-cup of
milk, mix thoroughly and turn into buttered-and-sugared molds. Bake as all
custards. Serve, turned from the molds, with wine, orange or currant jelly
sauce.

Banana Sandwich Pudding Recipe

8 slices of bread

6 bananas, peeled, sliced

2 1/2 cups milk, scalded

3 eggs

1 cup sugar

1 teaspoon vanilla extract



Mix sugar and eggs together. Add gradually the scalded milk. In a
pudding dish place 4 slices of bread at the bottom, then the bananas. Cover
with the other 4 slices of bread. Pour in slowly the milk and egg mixture and
add the vanilla extract. Set pudding dish in a pan of water. Bake in moderate
oven for about 30 to 35 minutes.

Banana Pudding


1 large pkg instant vanilla pudding, (6 ounces)
2 1/2 cups cold milk
1 can sweetened condensed milk, (14 ounces)
1 container whipped topping, (16 ounces)
sliced bananas vanilla wafer cookies Mix pudding and milk; add condensed milk. Blend well; fold in half the whipped topping.Alternate layers of pudding, bananas
and vanilla wafers; top with remaining whipped topping and a few banana
slices.Refrigerate overnight before serving.

Deep-fried Catfish
2 lb Catfish
1 ts Salt
2 Eggs, lightly beaten
1 c All-purpose flour
1/8 ts Pepper
1 c Dry bread crumbs
Heat oil to 375 degrees in deep fryer. Stir together flour, salt and
pepper.
Coat fish with the mixture; dip into eggs, then coat with the bread
crumbs.
Fry each piece for about 4 minutes or until golden brown. VARIATION:
Prepare thin batter by mixing 1 cup all-purpose flour, 1 tsp baking
powder, 1/2 tsp salt, 1 cup milk and beat till smooth. Coat fish with
flour mixture then dip into batter mixture.

Do you have a recipe for sweet potato dip out pie? It is made in a
very large dish and is juicy and dipped out. It has a crust just like
a cobbler.
