AMISH CORN BREAD
Ingredients
1 cup sifted flour
1/4 cup sugar
1 tablespoon baking powder
3/4 tsp. salt
1 cup yellow cornmeal
1 egg, well beaten
1 cup milk
5 tablespoons shortening melted and cooled
Directions
Sift first 4 ingredients. Mix in cornmeal. Blend egg, milk,
shortening until mixed. Add to dry ingredients and beat until smooth.
Use greased (bottom only) 8x8x2 pan. Bake 400 degrees for 20 minutes.

Sweet Corn Muffins
Makes 12 servings
Ingredients
2 1/2 cups stone-ground yellow cornmeal
1 tablespoon baking powder
1/4 teaspoon salt
1/3 cup oil
1/3 cup honey
1 1/2 cups 1% lowfat milk
Method
Preheat oven to 350°.
Combine dry ingredients. Make a WELL in the center and add oil,
honey, and milk. Stir until batter is smooth. Pour into an oiled
muffin tin, filling almost to the top. Bake for about 25 minutes.

Subject: Chili
Sweet Cincinnati Chili
Yield: 6 servings
Ingredients
2 tablespoon butter
2 lbs ground beef (lean)*
6 bay leaves
1 onion, finely chopped
6 garlic cloves, chopped
1 teaspoon cinnamon
2 teaspoon allspice
4 teaspoon vinegar
1 teaspoon whole dried red pepper, or 1 ts Chile caribe
1-1/2 teaspoon salt
2 tablespoon red ground, hot-mild chile
1 teaspoon cumin
1/2 teaspoon oregano
6 oz can tomato paste
6 cups water
16 oz can Kidney beans
1/2 lb vermicelli, cooked
1/2 cup Cheddar cheese, grated
1 onion, finely chopped
Directions
Heat the butter in a large heavy skillet over medium-high heat. Add
the meat to the skillet. Break up any lumps with a fork and cook,
stirring occasionally, until the meat is evenly browned. Stir in the
remaining ingredients up through the water. Taste and adjust
seasonings. If the flavor is too sweet, add a small amount of
vinegar; if not spicy enough, add a small amount of ground chile.
Bring the mixture to a boil, then lower the heat and simmer,
uncovered, for 2 to 4 hours. Add the kidney beans to the mixture 1/2
hour before serving.
Place a small amount of the cooked vermicelli in individual bowls.
Spoon on a generous amount of chili. Top with grated cheese and raw
onion or pass in individual bowls. *Note: I use 1 pound of lean
ground beef and 1 pound of ground pork.

Recipe: Cheesy Mummy Dogs
Great Halloween fun food for kids
8 servings
1 package of breadstick dough or 11oz.'s
1 package of hot dogs
8 slices of cheese (optional)
Mustard
Poppy Seeds (optional)
Preheat oven to 375F. Using 1 dough strip and one piece of cheese for
each, wrap hotdog with cheese and then with the bread stick dough over
the
cheese, leaving about 1/2 inch of hotdog unwrapped, and on the back of
the
part that is unwrapped pull dough to almost look like a pillow behind
the top
that is unwrapped. The part that is unwrapped will be where the eyes will
go.
Place on ungreased baking sheet.
Bake 12-15 minutes or until dough is golden brown
Remove from oven. Put dots of mustard for eyes on hotdog and 1 poppy
seed for the pupil of each mustard eye.

Subject: Cheesecake
Refrigerator Pineapple Cheesecake
Serves 8
Ingredients
1 cup unsweetened pineapple juice
1 3-oz package lemon gelatin
1 cup graham cracker crumbs
3 tbs margarine, melted
3 cup (1-1/2 lbs) low-fat cottage cheese
1/2 tsp vanilla
1/2 tsp almond extract
1 tbs sugar
1 8-oz can no-sugar-added crushed pineapple in natural juices,
undrained
1 tbs water
2 tsp cornstarch
1 tbs sugar
Directions
Preheat oven to 350 degrees F.
Bring pineapple juice to a boil in a saucepan over medium-high heat
and add gelatin. Stir until dissolved. Remove mixture from heat and
cool to lukewarm.
In a bowl, combine graham cracker crumbs and margarine. Press onto
bottom and up 1 inch on the sides of an 8-inch springform pan. Bake 5
minutes and allow to cool to room temperature.
Process cottage cheese, extracts and 1 tablespoon sugar in a blender
or the work bowl of a food processor, fitted with a metal blade,
until completely smooth. Add cooled juice mixture and process 30
seconds more to combine thoroughly. Pour into prepared pan. Cover and
refrigerate several hours or until firm.
In a small saucepan, combine crushed pineapple, water, cornstarch and
1 tablespoon sugar. Bring mixture to a boil over medium-high heat,
stirring constantly. Cool 20 minutes and spread evenly on top of
cheesecake. Cover and refrigerate 1 hour.

Recipe: Fried Donut Holes
Easy and quick recipe
1 can of Pillsbary Cinnimon Roles
Vegtable oil (enough for frying)
Sugar,Cinnimon, or Powdered sugar
Cut unbaked individual cinnimon roles in four pieces. Pour enough oil
to fill up pan so that the oil covers the dough pieces and heat on medium.
Drop dough pieces in oil for about 4 minutes or until brown.
Remove from oil and cool for 1 minute and roll in Sugar, Cinnimon, or
Powdered sugar.

Portuguese Sweet Bread
Serves 8 (Small loaf)
Ingredients
2/3 cup milk
1 egg
1-1/2 tablespoons butter
3 tablespoons sugar
1/2 teaspoon salt
2 cups bread Flour
2 teaspoons yeast
Method
Put ingredients into bread machine according to manufacturer's
directions. Should you prefer this even sweeter, increase sugar to 3
tablespoons.

I am looking for a recipes very similar to Ruby Tuesdays Onion
Sticks. That's what they call them at the rest. The onion is very thinly
sliced onions/rings ? The batter that they are cooked in is soooooooooooooo
good. Not like the typical onion rings. I am sure the batter is what makes
them WONDERFUL. Hope someone can help and Thanks.

Subject: Cheesecake
Baked Pineapple Cheesecake (Recipe
by Family Circle)
Yield: 12 servings
Ingredients
1/2 cup non-fat or low-fat granola
16 oz low-fat cottage cheese
8 oz light cream cheese, softened
1/4 cup all-purpose flour plus 2 tablespoons
1-1/4 cup sugar
1/4 teaspoon salt
4 large egg whites (room temperature)
1 teaspoon vanilla extract
1 cup crushed pineapple in juice
Directions
Preheat oven to 325 degrees; coat an 8-inch springform pan with
non-stick cooking spray. Whirl granola in a food processor until
slightly ground; spread in the pan. Process cottage cheese and cream
cheese in a food processor until smooth. Add flour, sugar, salt, egg
whites and vanilla extract; whirl until well blended. Stir in
pineapple. Pour into prepared pan; place pan on a baking sheet.
Bake for 1 hour. Turn off oven; let cheesecake stand in the oven,
with the door slightly open, for 1 hour. Remove pan to rack to cool
completely. Gently loosen cake from the sides of the pan and remove.
