The email by one of my assistants regarding sending us recipes
copied from other websites generated a lot of email. First of
all, the email was sent to the entire list and was not directed
at any specific person. Kellie helps me to handle the more
than 800 emails we get every day, and was reacting to all of
the email we get from webmasters who notice us reprinting
their recipes.

I am no copyright expert/lawyer but I have several friends who
are. I will be speaking at a workshop in 3 weeks which is
organized by one such lawyer. You can check it out at:

Anyway, an idea cannot be copywrited but a specific set of
words can. They can be reproduced as long as the source
is acknowledged and certain other restrictions are met. Many
of the webmasters you see listed in the search engines pay
thousands of dollars to get those top listings. Without those
top listing they do not get enough website traffic to make
their websites business successes. That applies to our
websites too. When these other webmasters see their recipes
reprinted by us they sometimes email asking that we not steal
recipes from their websites. THAT'S what generated the email.

Please continue sending in your recipes. It makes life a
lot easier for us if you don't send in those copied off
other websites but sometimes that's the only place you can
find them. You will also often notice recipes posted where
the submitter is actually the webmaster of the site mentioned
in the signature file. There are examples of that in this
issue. We have a lot of terrific cooks on this list of over
15,000 members and we'd love to have your favorite, secret,
time-tested recipes :-)

Re: Pyrex Dish Incident
I too had a similar experience with a Hamilton Beach Crock Pot. Early
one morning, I put everything I needed to fix a Beef Stew in my Crock
Pot. I set it on low & went to work. My husband called me around
1:00pm & said that the whole house smelled like heaven. Thank God
because I didn't have a chance to eat anything for lunch. My husband
began to prepare to pick me up from work. He went upstairs to shower.
When he slid the shower door back to get in, he said that he thought
he heard a car backfire. He finished showering, put his clothes on &
left. Not once after that did he go into the dining room & check
the Crock Pot. When I came home & stepped into the door, I was greeted
with the most wonderful smell of Beef, Garlic, Onions, etc...etc... I
ran to get a large spoon from the kitchen to stir my stew. As I turned
the bend to go into the dining room & turned on the light, there was
Beef Stew bits dripping from my freshly painted wall, French Doors,
pictures of my daughter, the corner table that the Crock Pot was
sitting on, & the floor. Glass was floating on top of the Beef Stew
that was still in the Crock Pot. And the handle was floating in the
center of it all. The rim of Stainless Steel that surrounds
the actual lid was still sitting there where it normally sits in the
lip/edge of the Crock Pot. I screamed, "What happened?!" My husband
came in the dining room & said, "That must have been what I heard as I
was getting into the shower." I spent the rest of evening cleaning up
Beef Stew. And our dinner that night was Hot Dogs that smelled like
Beef Stew. I did go to the Hamilton Beach website to complain. I was
asked to send to them whatever pieces of glass I had cleaned up as well
as the Crock Pot. I did and I was sent a brand new Crock Pot. The
Customer Service Representative at Hamilton Beach could not explain why
it happened. She said that my particular Crock Pot could have been a
defective one. Nevertheless, she did as she promised, which was send
it back & we'll send you a new one. That's that kind of customer
service I can relate to. However, the whole point to the story is: BE
CAREFUL with a Crock Pot that has a glass lid! We never thought that a
Crock Pot could be a dangerous appliance in our home. They were
designed to be an added convenience, especially for the working woman
or on the go Mom, but sometimes they can be as dangerous as an other
appliance in our homes.

I saved this recipe from Auntrunnersrecipes.com and
made it this week. It tastes just like the candy bar
and is soooooo rich. It calls for 1 lb. chopped
almonds, but the day I bought the ingredients, I was
too frugal to spend $16.00+ on almonds, so only used
one 3 oz. package of almonds and it turned out fine.

Almond Joy Cake

Location: Delavan, Wisconsin

1 chocolate cake mix
1 small box instant chocolate pudding
1 cup evaporated milk
1 1/2 cup sugar
1/2 cup miniature marshmallows
14 oz. coconut
1/2 cup milk
1 stick oleo
12 oz. chocolate chips
1 lb. chopped almonds

Mix chocolate cake mix according to directions with
one small box instant chocolate pudding. Bake in
oblong pan (I used 13x9). Mix 1 c. evaporated milk and
1/2 c. sugar. Bring to a full boil. Remove from heat.
Add 1/2 c. small marshmallows and 14 oz. coconut.
Spread over hot cake.Mix 1 c. sugar, 1/2 c. milk, 1
stick oleo. Bring to full boil. Add 12 oz. chocolate
chips, 1 x. chopped almonds. Spread on coconut
mixture.

Subject: Pyrex dish

This happened to my wife a couple of years ago. She had just taken it
from the oven and sat it on the cooktop when all of a sudden it
exploded. Glass flew everywhere. At that time we had a carpeted
kitchen floor. The hot glass that hit the floor melted right into the
carpet.

Slice 3 large sweet onions and put in a large pot
along with a stick of margarine, sauté the onions until
they are tender and translucent. Add 4-5 cans of
good beef broth, I use College Inn but Swanson's
works just fine.

Bring to a boil and then simmer for about 2 hours on a
very low flame, stirring every so often. At any point during
the cooking you can add a splash of white wine, I use
Holland House.

When ready to serve slice up a nice French bread, place
on an ungreased cookie sheet and bake in the oven until
slices turn brown.

Remove from oven and place a slice or two in your
bowls, top with shredded mozzarella cheese and ladle
hot soup over the cheese. The cheese will melt and you
are ready to serve. Some people use ovenproof dishes
and brown the cheese in the broiler. You can do this
if you have the time, but we like it when the cheese
just melts.

Serve in large bowls if this is a main course or smaller
ones if it's just for an appetizer. Good with a nice
sandwich, salad and a glass of your favorite wine.

Pour off all but three tablespoons of the oil or
dripping. Heat skillet and add three tablespoons of
flour and stir until smooth. add two cups water, or
if you want milk gravy add milk. Add salt, pepper,and
if you want, garlic powder and a dash tabasco. Stir
until thick. Ann

three cups milk save, one half cup for later
one cup sugar
three egg yolks
heat this mixture until it is almost simmering then
add the half cup milk to which you have added four
tablespoons cornstarch mixed until smooth.

keep stirring the mixture while it thickens then add a
teaspoon vanilla and two tablespoons banana flavoring.
When consistency is thick remove from heat. It will
thicken more as it cools. This pudding with sliced
bananas can make banana pie with whipped cream on top
or pudding mixed with bananas and vanilla wafers.

This same pudding without the banana flavoring can
fill cream puffs or you can use coconut flavoring with
shredded coconut to make coconut pie. It is a
wonderful basic pudding recipe. Ann

Old Fashioned Mincemeat

1 1/4 lb. beef shoulder or bottom round, cut into one inch cubes
1 cup apple cider
4 tart cooking apples, pared, cored, finely chopped
1 1/4 cup plus 2 Tbsp sugar
2 1/2 cup dried currants
2 1/2 cup dark raisins
8 oz mixed candied orange and lemon peel, finely diced
1 stick butter
1 lb sour cherry preserves
1 tsp ground ginger
1/2 tsp ground cloves
1/2 tsp grated nutmeg
1/2 tsp cinnamon
1/2 tsp salt
16 oz can sour cherries packed in water, drained
1/2 cup reserved cherry liquid

Heat beef shoulder and 1/2 cup cider in large Dutch oven to boiling,
reduce heat and simmer covered until meat is tender when pierced
with a fork, about 20 minutes. Remove meat to work surface, coarsely
chop and return to pan. Stir all remaining ingredients except
drained canned cherries into meat. Heat to simmering. Cook
uncovered, stirring occasionally, over low heat until very thick,
about 1 & 1/2 hours. Stir in cherries and remove from heat.
Refrigerate in container or jar with tight-fitting lid at least
one week before using. Mincemeat will keep in refrigerator up to
three weeks or freezer up to three months. Put mincemeat into an
unbaked pie shell and put pastry on top and crimp edges and poke
several holes in top pastry. Brush top with cream and sprinkle
with sugar. Bake 40 minutes at 340 degrees. You may need to
protect edges of crust the last 15 to 20 minutes to keep from
becoming too brown. Serve warm/hot with ice cream or whipped cream
on top.
