Thank you so much to all of you who took the time to write out
recipes in answer to my requests. I appreciate your time so much
and can't wait to try all of them out. I thought I would share a
recipe from our neighbor with all of you. Its fast, easy and
delicious. Hope you all enjoy.
Coconut Pecan Cake
1 box butter cake mix
1 cup water
2/3 cup cooking oil
4 eggs
1 can coconut pecan frosting
1/2 cup chopped pecans
Combine cake mix, water, oil and eggs and beat until smooth in an
electric mixer or with a hand mixer. Usually about 2 minutes. Stir
in the frosting and chopped pecans and blend well.
Bake in a well greased and floured Bundt pan in a preheated 350 degree
oven for about 1 hour. It may take a few minutes longer, so test it
after 1 hour. Cool in the pan for 20 minutes before removing.
This is great if you have to transport because the frosting is
inside!! And it is sooo moist.

Popeye's Dirty Rice
1 pound Spicy bulk breakfast sausage
1 Can clear chicken broth -- (14 ounces)
1/2 cup Long-grain rice
1 teaspoon Dry minced onion
Brown sausage in skillet until pink color disappears, crumbling with
fork. Stir in broth, rice and minced onion. Simmer gently, covered, 18
to
20 minutes or until rice is tender and most of broth is absorbed.

Recipe Request: BBQ Beef w/ slaw
I once ate at a little hole in the wall BBQ place in Florence, Al.
On the BBQ Beef sandwhiches it had some kind of yellow slaw. It was so
good with the sandwhich.
Can anyone give me a recipe that they think may be what I am looking
for.

This is a recipe for the best Chicken Salad I have ever ate.
Chicken Salad
3 lbs chopped chicken
1 lb seedless green grapes
1½ cups pecan halves
1 cup diced celery
1 cup chopped fresh dill
1½ cups sour cream
1½ cups mayonnaise
Salt and pepper to taste
2 bunches watercress (optional)
Dill springs for garnish
Preparation Notes
1. If using boneless chicken breasts, cover the breasts with chicken
broth in a shallow pan and bake covered 30 minutes.
2. Combine chicken, grapes, celery, and dill and toss well.
3. Combine sour cream, mayonnaise, and salt and pepper for dressing
and mix well before tossing with salad.
4. Cover and refrigerate 2 hours.

Summer Fruit Pie
(Recipe from Baking Bits)
This is just the best pie to make for a summer dinner or cookout. It
has an easy cookie crust that you press into the pie pan, and it
works with any fresh in-season fruits and berries that are available.
A combination of strawberries, blueberries, bananas, grapes, sliced
fresh nectarines, and orange sections. Other good choices are
peaches, plums, kiwi and apples.
Ingredients
Crust
1/4 cup butter, softened
1/4 cup sugar
1 egg yolk
1 tsp. grated lemon rind
1 cup flour
Blend softened butter, sugar and egg yolk together. With pastry
blender or two knives mix in the flour and lemon rind until crumbs
form. Press into a 9-inch pie pan and bake the crust at 400 degrees
F. for 8 - 10 minutes or until edges are brown. Cool completely.
Filling
1/2 cup sugar
3-1/2 tablespoons corn starch
1-1/2 cups orange juice
1/4 cup lemon juice
1 tsp. grated lemon rind
6 cups assorted cut-up fresh fruit, drained
In a medium saucepan combine the sugar and corn starch. Gradually stir
in the orange juice until smooth. Stirring constantly, bring to a boil
over medium heat and boil for 1 minute. Remove from heat and stir in
lemon juice and lemon rind. Cool completely. Fold in the cut up fruit
and turn into the baked cookie crust. Chill for 4 hours before
serving.

Fruit Cocktail Pie
Makes 1 - 9 inch pie
Ingredients
1 (9 inch) pie shell, baked
1 (15.25 ounce) can fruit cocktail
1 (4.6 ounce) package cook and serve vanilla pudding
2 cups milk
1 pint heavy cream
Directions
1. Drain fruit cocktail, reserving 1 cup of juice. In a saucepan,
prepare pudding according to package directions, using 2 cups milk
and 1 cup reserved juice. Remove from heat and stir in the drained
fruit cocktail. Pour into baked pie crust and let set at room
temperature until cooled, then place in refrigerator until serving
time.
2. Place glass bowl and mixing beaters in freezer. Just before
serving, whip up the heavy cream in the frozen bowl. Do not add sugar
and do not over-whip. Spoon on top of pie and serve.

Ingredients
1 pound spicy bulk breakfast sausage

Like Popeye's Red Beans and
Rice
4 servings
Ingredients
2 cans (15 oz) red kidney beans
1-1/2 teaspoon white pepper
1/4 teaspoon paprika
4 tablespoons butter; cut into pieces
1/4 teaspoon garlic powder
4 servings rice (recipe follows)
Directions
Pour beans with their liquid into a large saucepan and place over
medium heat. Add pepper, paprika, butter and garlic powder. When beans
come to a boil, use a fork to mash some of them against the side of
the pan. Stir mixture constantly. In about 20 minutes, the beans will
reach the consistency of refried beans. (they will be smooth and
creamy, with some of the whole beans intact).
To serve, pour 1/2 cup beans into a bowl and top with 1/2 cup rice.
Rice Recipe:
1-1/2 cups quick-cooking rice
1-1/2 cups water
salt
2 tablespoons butter
1/2 teaspoons garlic
Directions
Prepare rice according to package directions, using 2 tablespoons
butter and 1/2 teaspoon garlic salt instead of the amounts of butter
and salt specified on package.

This is a great salad. It is from a local restaurant and was featured
in our paper due to a request by me.
Chicken Cashew Salad
1 pound mixed romaine and iceberg lettuce
6 ounces diced cooked chicken breast meat
(about 1 1/3 cups)
3 ounces sharp cheddar cheese, shredded
(about 3/4 cup shredded)
1 1/2 cups pineapple chunks
1/2 cup sliced ripe olives
1/4 cup diced red onion
1 small ripe tomato, diced (about 1/2 cup)
3 1/2 ounces whole salted cashews (about 1/3
cup)
1/2 cup purchased honey Dijon dressing
Put greens into a 3-quart chilled salad
dish, peaking the greens in the center. Add
chicken and sprinkle with cheese. Place
pineapple chunks around perimeter of dish.
Sprinkle olive slices, onions and tomatoes
over salad. Top with cashews.
Add dressing and immediately serve with a
warm roll or bread stick. Makes 4 to 6
servings.
I usually serve the warm rolls. This is
really popular at our home and this is
requested when we have to take a dish to
pass.

Does anyone have a Sweet Potato Bread recipe (a good one)? This is a
southern Georgia treat. It's Sweet Potato Pie without the crust. I
think the spices (and the crust) are the only differences between the
two, I've tried to make it but have been unsuccessful. My
grandmother's recipe calls for a little bit of this and a little bit
of that, but never how much of this or that.
A quick and delicious chicken casserole.
3lb. chicken, seasoned, boiled (I add butter to the water) & diced
8 oz. sour cream
1 10 1/2 can each cream of chicken & celery soups
salt/pepper to taste
2 sleeves of crushed buttered crackers (Toll House or Ritz)
Mix chicken, soups, and seasonings. Set aside. In a buttered baking
dish add one sleeve of crackers. Add chicken mix and top with
remaining crackers. Dollop with melted butter.
Cook 350 degrees 20-30 minutes until slightly browned and bubbly.

Onion Crisps
Makes 4 servings
Ingredients
Vegetable oil for deep-frying
3/4 cup all-purpose flour
1 tablespoon plus 1 teaspoon Creole Seasoning
1 large egg
2 cups thinly sliced yellow onions, separated into rings
1/2 teaspoon salt
Directions
Pour enough oil to come halfway up the sides into a large heavy pot
or electric deep-fryer and heat over high heat to 360 degrees F.
Combine the flour and 1 tablespoon of Creole Seasoning in a shallow
bowl. Whisk the egg and 2 tablespoons water in another shallow bowl.
Dip the onions in the egg mixture, then toss in the seasoned flour,
shaking to remove any excess flour.
In batches, without crowding, deep-fry the onions until crisp and
golden, 2 to 3 minutes. Using a slotted spoon, transfer to a paper
towel-lined baking sheet. Before serving, season with remaining 1
teaspoon of Creole Seasoning and salt.
Essence (Emeril's Creole Seasoning):
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme
Combine all ingredients thoroughly. Store in air-tight container.

Penne Rustica
Ingredients
14 oz. box real Torino Penne
3 oz. butter
3 oz. extra virgin olive oil
1/4 cup finely chopped shallots
2 cloves finely minced garlic
1/2 cup crushed walnuts
6 oz. panna or cream cheese
2 oz. shaved parmesan cheese
pinch of fresh, chopped Italian parsley
1/3 teaspoon fresh crushed black pepper
1/4 teaspoon salt
Directions
Sautee shallots and garlic in olive oil until translucent. Add
butter and walnuts and cook until walnuts are browned but not
burning. Add salt and black pepper and stir in cream. Cook penne
until al dente and mix immediately with the sauce. Top with shaved
parmesan cheese and parsley and serve immediately.
