the New Orleans Pound Cake uses no rising agent...did you forget
the
baking powder or baking soda...it doesn't use cake flour...which
has
those things...only regular flour...is this a mistake?

Subject: About Red Velvet cake
Is there anyway that you could use beet juice for some of the red
color in a Red Velvet Cake? Or maybe puree some beets, instead of
using all that artificial coloring.

Subject: POPPY SEED DRESSING: ROQUEFORT DRESSING:
Poppy Seed Dressing:
- 1 cup sugar
- 2 tsp dry mustard
- 1 tsp salt
- 2/3 cup cider vinegar
- 2 tsp onion juice
- 2 cups salad oil
- 1 Tbs poppy seeds
Combine sugar, mustard, salt, vinegar, and onion juice, mixing well.
Add oil gradually and then add poppy seeds. Serve over fresh fruit
of
the season. Yield 3 cups. Keep refrigerated

Roquefort Dressing:
- 1/4 pound Roquefort or blue cheese
- 1/2 cup mayonnaise( if its homeamde, better)
- 1/2 cup cream
- 1/2 cup sour cream
- 2 Tbs lemon juice
- 1 tsp grated onion
- 2 Tbs chopped parsley
- 1 tsp Worcestershire sauce
- 1/4 tsp garlic salt
- 1/4 tsp black pepper
- 1 tsp salt
Mash cheese in a mixing bowl. Add all other ingredients and mix
well.
Yields 2 cups Keep refrigerated.

Homemade Mayonnaise:
- 2 Tbs lemon juice
- 1 tsp salt
- 1 1/2 tsp prepared mustard
- 1 tsp sugar
- 2 egg yolks
- 1 pint chilled salad oil
OPTIONAL: 12 drops Tabasco
3 Tbs capers
Place lemon juice, salt, mustard and sugar in an electric mixer
and
mix on medium high speed until blended. Add egg yolks, one at a time.
Add oil gradually by droplets until mayonnaise thickens, then add
oil
faster. Makes abpout 2 1/2 cups.

Subject: LOUISIANA HERB RICE:
Louisiana Herb Rice:
- 4 Tbs butter
- 3 Tbs minced onions
- 1 tsp minced garlic
- 2 cups raw rice
- 2 bay leaves
- 1 tsp thyme
- 1/2 tsp basil
- 1 tsp marjoram
- 4 cups chicken stock
- Salt and pepper to taste
Melt butter in a saucepan and saute onions and garlic without
browning. Add rice, bay leaves, thyme, basil and marjoram. Cook until
translucent.Bring stock to a boil and add to rice. Salt and pepper
to
taste; cover and simmer 30 minutes or until tender. Remove bay leaves
before serving. Makes 8 servings

Subject: BAKED GRITS NEW ORLEANS:
Baked Grits New Orleans:
- 1 1/2 cups grits
- 6 cups water
- 2 1/2 tsp salt
- 1 stick butter
- 1/4 tsp cayenne
- 3 eggs, beaten
- 1 pound sharp cheese, grated
- 1 Tbs chopped parsley
Add grits to salted boiling water and cook till done. Add butter,
cayenne, eggs, and 14 ounces of cheese, mixing well. Pour into a
buttered 2 1/2 quart baking dish; top with remaining cheese, and
bake
1 hour and 15 minutes in a 350 degree oven. Garnish with parsley.
Makes 8 servings

Subject: SWEET POTATOES IN ORANGES:
Sweet Potatoes In Oranges:
- 8 medium sweet potatoes
- 1 stick of butter
- 3/4 cup light brown sugar
- 4 beaten eggs
- 1 cup light cream
- 1/8 tsp ground allspice
- 1/4 tsp ground cinnamon
- 1 tsp salt
- 1/2 cup chopped pecans
- 1/2 cup sherry
- 8 orange cups** SEE NOTE**
To make orange cups, cut 4 large oranges in half, scoop out all
pulp
without damaging rind. Flute the edges of each cup.
Bake potatoes at 350 degrees, for 60 minutes,till soft. Peel potatoes
and mash well, removing all lumps. While hot add butter, sugar, eggs,
cream, allspice, cinnamon, and salt. Stir in pecans and sherry,
reserving a few pecans for decoration.Place in oranges, decorate
with
pecans, and bake in a 350 degree oven for 20 minutes to brown top.
Makes 8 servings

Hi
This is a real simple cream cheese cake with no baking.
1 graham cracker crust
1 large package of cream cheese
1 box of instant pudding (any kind will work)
1 3/4 cups of milk.
Soften cream cheese, and beat with hand mixer. Start adding the
milk
very slowly to the cream cheese. When it is all blended add your
box
of pudding. The pudding with start thickening right a way. Pour into
graham cracker crust. Put in refrigerator for a couple of hours,
and
sit back and enjoy the Holidays.

Subject: Cream Cheese Coconut Cookies
Cream Cheese Coconut Cookies
Ingredients:
1 (8 ounce) package cream cheese
1/2 cup butter, softened
1 egg
1/4 teaspoon coconut extract
1 (18.5 ounce) package yellow cake mix
Optional: 1/2 cup coconut
1/4 cup confectioners' sugar
Preheat oven to 350 degrees. In a medium bowl, cream
together the cream cheese and butter. Stir in the egg and
extract. Add cake mix, and stir until well blended. Roll into
1 inch balls and coat in the confectioners' sugar. Place 1 inch
apart onto an ungreased cookie sheet. ( I used parchment
paper). Bake for 10 to 13 minutes in the preheated oven. After
a few minutes remove from baking sheets to cool.
Try other flovor mixes :-)

Subject: St. Paul's Rice
St. Paul's Rice
1 large bell pepper, chopped
1 medium onion, chopped
4 stalks celery, chopped
1 lb. pork sausage
1 small jar pimentos
1/2 cup raw rice
2 envelopes of chicken noodle soup (dry mix)
Preheat oven to 350° F.
Brown sausage, onion, green pepper, and celery; Drain grease.
Bring to a boil 4 cups of water, pour in rice and soup. Boil for
7
minutes.
Mix with sausage mixture, and stir in pimentoes. Bake for 1 hour
in
350º oven.

Subject: No Bake Cheese Cake
No Bake Cheese Cake
1 - Can Sweetened Condensed Milk
1/4 teaspoon vanilla
1 - 8oz. package cream cheese
1 - graham cracker pie crust
1/3 cup lemon juice
1 - can pie cherries
Blend sweetened condensed milk and cream cheese. Gradually blend
in
lemon juice and vanilla. Beat until firm. Pour into pie crust.
Chill for 3 hours. Add cherry topping. Delicious!

No Bake Cheese Cake
This does not use evaporated milk.
1 8 ounce container Cool Whip defrosted
1 8 ounce bar of Cream Cheese softened to room temperature
1/2 cup sugar
1 tablespoon vanilla extract
1 ready made pie crust such as graham cracker
1 can Comstock pie filling of your choice
Mix all ingredients except crust and fruit filling until well blended.
Pour into crust, let set for a bit and then top with your fruit
filling.
Chill until ready to serve.
