Subject: ARTERY BREAD:

ARTERY BREAD:

- 1 long sourdough baguette
- 5 garlic cloves, finely chopped
- 1/4 lb. butter, salted
- 2 cups heavy cream
- 1 cup grated parmesan cheese
- 2 Tbs ground coriander
- Pepper Medley, to taste
- Parsley flakes, to your taste

Melt about 2 Tbs or less of the butter in a medium saucepan. Add the
garlic and saute until golden. Slice the baguette the length of the
bread, creating 2 halves. Then cut 3 inch wide slices down each half,
without cutting all the way through the borrom. Add the remaining
butter to the saucepan and melt it. Evenly pour the garlic and butter
over each half of the bread. Set the saucepan aside, but dont clean it
yet. Close the bread back up and put it on a baking sheet. Bake,
uncovered, until the outside is slightly crispy and the inside is very
warm.

Subject: ICE CREAM CRUNCH CAKE

1 - 12 oz. pkg. chocolate pieces
2/3 c. peanut butter
6 c. Rice Crispies
1 gallon vanilla ice cream

Melt choc. chips and peanut butter together in a large pan; add
cereal. Spread on a cookie sheet and cool; break up cereal mixture
into small pieces. Soften ice cream; fold in all but 1 cup of the
cereal mixture and spread in a 10 inch spring form pan. Use the
remaining 1 c. of cereal mix. to make decorative topping, then
freeze. Garnish with whipped cream and strawberries if desired.

INGREDIENTS
-----------------------

8 oz Pkg egg noodles, cooked and
drained
1 Can Corned beef
1 Can Cream of chicken soup
1 x Soup can of milk
3/4 Cup American cheese, diced
Salt and pepper, to taste

DIRECTIONS
------------------------

Place all ingredients in lightly greased baking dish and bake at
350* for 45 minutes.

Subject: Pumpkin Casserole


***** Pumpkin Casserole *****

INGREDIENTS
----------------------

1 1/2 lb Fresh pumpkin meat
1 Large Onion, finely chopped
1/2 Tsp Salt, or as desired
1/4 Tsp Ground white pepper
2 Tbsp Unsalted butter, melted
2 x Eggs
3/4 Cup Milk
3/4 Cup Farmers cheese, OR- hoop or
ricotta

DIRECTIONS
-------------------------

Pumpkin dishes don't have to be sweet. This one is perfect with
roast pork. Hollow out a small pumpkin to serve this in for a
special presentation. PREHEAT OVEN TO 375F. Using a paring knife
or vegetable peeler, peel and discard outer skin of the pumpkin.
Slice the pumpkin into 1/4-inch slices and place in a mixing
bowl. Add the onion, salt, pepper and butter and toss well. Pour
contents of the bowl into a 9-inch round or square greased baking
dish, cover with foil and place in the oven. Bake for 30 minutes.
Meanwhile, beat eggs, milk and cheese together until smooth.
Remove the baking dish from the oven, remove the cover and pour
the cheese mixture over the top. Replace in oven, uncovered,
another 20 minutes. The gratin is done when it turns golden

INGREDIENTS
-------------------------
1 lb Ground steak (bottom round)
1 Med Onion
2 Med Green peppers
4 Med Fresh tomatoe, sliced
2 Cup Fresh corn
(or canned Niblets)
1/2 Cup Bread crumbs
1/2 Cup Grated cheese
4 Tbsp Butter
Salt
Pepper

DIRECTIONS
-----------------------------

Cut onion and green peppers fairly coarse and marinate in the
butter for three minutes. Add the meat, season with salt and
pepper and cook slowly for about 10 minutes. Butter a casserole
and put in a layer of corn, a layer of the meat mixture and a
layer of tomatoes. Repeat until all of the ingredients are used.
Cover with bread crumbs and spread with the grated cheese. Bake
for 45 minutes in a 425 degree over.

Subject: Fannie Daddies

INGREDIENTS
------------------------

3 x Eggs, separated
2 Tbsp Oil
1/2 Tsp Salt
1 qt Clams, shucked & well draine
1 Cup Milk
2 Cup Flour
2 Tbsp Lemon juice
Oil for frying

DIRECTIONS
-----------------------
In a large bowl, beat egg yolks until thick. Beat in milk, 2 T.
flour, salt, and lemon juice. In a separate bowl, beat the egg
whites until stiff. Fold into the batter. Add clams. Chill the
mixture for 2 - 4 hours. In a heavy saucepan, pour in enough oil
to measure 2 - 3 inches deep. Heat to 375f. Add the clams,
several at a time, and fry until puffed and golden, about 3
minutes. Remove with a slotted spoon and drain well on paper
towels. Serve with tartar sauce and thick slices of French bread.
