Subject: White Potato Pie

I am still looking for a white potato pie recipe.
My Grandmother used to take white potatos and make them taste
like a sweet potato pie. I had put in a request about a month
ago to anyone that may have such a recipe. Please if you do,
let me know.

Quick Peach Cobbler
1/2 cup butter
1 cup milk
1 cup self-rising flour
1 cup sugar
4 cups sliced peaches, sweetened to taste

Melt butter in a 8x12 inch dish. Mix milk, flour and sugar and
add to melted butter. Add peaches, but do not stir. Bake at 375
degrees for 40 min or until browning is noted. Serve warm with
whipped cream or ice cream, if desired.
Other fruits can be substituted for peaches.

CHEESY MACARONI AND CHEESE WITH SOUR CREAM

3 CUPS MACARONI
3 EGGS
1 CUP SOUR CREAM
2 CUPS EVAPORATED MILK
8oz VELVETA CHEESE
1 1/2 CUPS MILD CHEDDAR CHEESE
1 1/2 CUPS JACK CHEESE
SALT & BLACK PEPPER TO TASTE
1/4 CUP BUTTER

BOIL WATER FOR MACARONI ADD SALT TO TASTE. ADD MACARONI AND STIR OCCASIONALLY UNTIL TENDER. DRAIN AND RINSE. ADD BUTTER TO MACARONI.

IN A BOWL MIX SOUR CREAM EGGS AND MILK, STIR INTO MACARONI. CUT VELVETA CHEESE IN SMALL PECIES ADD TO MACARONI. GRATE CHEDDAR AND JACK CHEESE. TAKE ABOUT 1/2 CUP OF EACH AND SET ASIDE. MIX THE REST OF THE CHEESE IN WITH THE MACARONI. POUR INTO BAKING DISH, TAKE THE REMAINING CHEESE AND SPINKLE OVER THE TOP.

BAKE IN A PREHEATED OVEN 350 DEGREES FOR ABOUT 40 TO 45 MINS.

Fried Eggplant
Yield: 1 Servings

1 Eggplant
1 Egg; beaten
1/2 tsp. Salt
1/4 tsp. Pepper
Cornstarch
Fat for deep frying

Pare and slice eggplant. Dip into egg mixed with salt and pepper,
then into cornstarch, seeing to it that it's well covered. Fry to
a deep rich brown; drain on brown paper. Eggplant cooked this way
will be found very delicate and digestible.

Hello,

First I want to say thank you for the awesome recipes that I
have been receiving. I have been searching for a spaghetti
recipe...you know a good "soulful" spaghetti recipe. I can't
remember how my mom made her spaghetti but it was so delicious
and it was hardly "Italian", if you know what I mean. I remember
she used a chili mix for the ground beef, like Lawry's or
something, and of course tomato sauce. She would serve golden hot
corn bread with it too. And lets not forget the kool-aid. I've
some people serve it up like a spaghetti bake with shredded
cheddar cheese on top like a casserole. But it seemed as though
the secret was in the meat and how it was seasoned. Whatever it
was, I can't remember it for the life of me. As a result, I don't
like spaghetti because I cannot capture that home cooked flavor
that my Mom used to give it. I would appreciate any suggestions.

Subject: Chocolate nut cake

Hello!! Heres a chocolate lovers Goodie, Enjoy!!!

Chocolate nut cake:

1/3 cup solid vegetable shortening
2 ounces( 2 squares) unsweetened chocolate, chopped coarsely
3/4 cup all-purpose flour
1/2 tsp baking powder
1/2 tsp salt
1 cup sugar granulated
2 large eggs
1/2 cup coarsely chopped almonds, hazelnuts or pecans, about 2 oz.

1- Preheat oven to 350 F
Grease a 9-inch round cake pan
Dust with flour: tap out excess.

2-In small saucepan, heat shortening, and chocolate over low heat,
stirrring constantly until melted. Cool lightly.

3-Mix together flour, baking powder and salt.

4-Beat together sugar, eggs at med speed until light and fluffy.
Stir in chocolate mixture.At low speed, beat in flour mixture till
well blended, Stir in 1/4 cup nuts.

5-Spread batter in prepared pan: smooth top. Sprinkle with
remaining nuts:press into batter.

6- Bake cake until a toothpick comes out clean.,30 to 35 minutes.
Transfer pan to wire rack to cool slightly.

7-Loosen cake by running a metal spatula around sides of pan.
Transfer cake to rack to cool completely. Serve cake with whipped
cream.

Subject: Stew

Old Fashioned Beef Stew

1 Tbsp oil
1 1/2 lb beef stew meat, cut into 3/4 inch cubes
4 carrots, medium, cut into 1/2 inch thick slices
3 red potatoes, medium, unpeeled, cut into 1/2 inch cubes
1 1/2 cup frozen pearl onions (from 16 oz pkg)
1 stalk celery, cut into 1 inch pieces
3 cup V-8
3 Tbsp tapioca, quick cooking
1 tsp beef bouillon crystals
1/8 tsp garlic powder
1/4 tsp pepper
2 tsp worcestershire sauce

In large skillet, heat oil over medium high heat until hot. Add
beef; cook 4 to 6 minutes or until browned. In 3 1/2 or 4 qt
Crock-Pot, combine browned beef and all remaining ingredients.
Mix well. Cover; cook on low setting for 9 to 10 hours or until
beef and vegetables are tender.

Mexican Fudge
Makes about 2 pounds

3, 6 ounce packages chocolate chips
1, 14-ounce can eagle brand sweetened condensed milk
dash of salt
1/2-1 cup chopped nuts, optional
1 teaspoon vanilla
1 tablespoon instant coffee
1 teaspoon ground cinnamon

Line an 8-inch square baking pan with waxed paper.
Melt chips, add condensed milk and salt.
Stir until combined.
Add nuts (if desired), vanilla, instant coffee, and cinnamon.
Spread evenly into prepared pan.
Cool in a cold place for two hours or until firm.
Cut and serve.

Subject: Crab

Roast Garlic Crab
(Serves 4)

4-5 garlic cloves
6 tablespoons unsalted butter
6 tablespoons extra virgin olive oil
4 Dungeness crabs, about 1-1/4 pounds each, cooked, cleaned,
and cracked
Gray salt and freshly ground pepper
3 tablespoons freshly squeezed lemon juice
1/4 cup finely chopped fresh flat-leaf parsley



Peel and mince the garlic cloves, to yield about 2 tablespoons.
Preheat the oven to 500°F. Heat the butter, olive oil, and garlic
in a very large ovenproof sauté pan over medium-high heat until
hot. (You may need 2 pans.) Add the crab, season to taste with
salt and pepper, and toss well. Transfer to the oven and roast
until the garlic turns light brown and the crab is heated through,
about 12 minutes. Toss once halfway through. Pour the contents of
the pan into a large warm serving bowl, add the lemon juice and
the parsley, and toss well. Serve pronto with plenty of napkins!

Subject: Pie

Strawberry Cream Cheese Pie

Ingredients

1 quart strawberries; divided
1 cup sugar
1/4 cup cornstarch
3 ounces cream cheese; softened
2 teaspoons milk
1 (9 inch) pastry shell
Whipped cream (optional)

Method

Wash, cap, and drain strawberries. Mash 2 cups strawberries in
medium bowl; strain juice and add water if necessary to make 1 1/2
cups of juice.
Stir together sugar and cornstarch in medium saucepan; gradually
stir in strawberry juice. Bring to a boil over medium heat,
stirring constantly.
Reduce heat to medium low and cook for an additional 2 minutes,
stirring constantly; cool to lukewarm. Soften cream cheese by
blending with milk and carefully spread over bottom of pastry
shell.
Top with remaining whole berries.
Pour cooled juice mixture over berries and chill. Serve with
whipped cream, if desired.

Fried Apple Pies
Makes 6 to 8 fried pies

Ingredients

2 cups all-purpose flour
1/2 cup shortening
1 teaspoon salt
1/2 cup cold water
2 apples
1/3 cup white sugar
1/2 teaspoon ground cinnamon
1 cup vegetable oil

Directions

1 Peel and dice apples. Add sugar and cinnamon. Cook in a saucepan
on low heat. Cook until soft, then mash with fork to form a thick
applesauce.
2 Sift flour and salt together. Cut in the shortening. Add water
and mix with fork.
3 Roll out to about 1/8 inch thick on a floured board. Cut with a
large cookie cutter (4 inches in diameter).
4 In each round, place 1 heaping tablespoon fruit. Moisten edges
with cold water, fold and press edge with a fork.
5 Heat oil in a large skillet on medium-high heat. Fry pies, a
few at a time, 2 to 3 minutes on each side; cook until golden
brown. Drain on paper towels.
Sprinkle with confectioners sugar.

Subject: Bread Pudding

Chocolate Bread Pudding
Makes 1 - 9x13 inch pudding


Ingredients


1 (8 ounce) loaf baguette
1/2 cup unsalted butter, melted
1 cup semisweet chocolate chips
3 cups heavy cream
1 cup milk
2 eggs
8 egg yolks, room temperature
1/2 cup white sugar
1 tablespoon vanilla extract

SAUCE

2 ounces unsweetened chocolate, chopped
1 tablespoon butter
1/3 cup boiling water
1/2 cup white sugar
3 tablespoons corn syrup
1 teaspoon vanilla extract

Directions

1 Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13
baking dish.
2 Slice baguette in 1/4 inch slices and brush one side with melted
butter. Place on a baking sheet and into preheated oven until
golden, about 1 minute.
3 Melt chocolate chips in microwave or double boiler. Set aside.
4 In a medium saucepan over low heat, heat cream and milk until
warm. Do not scald.
5 In a large bowl beat eggs, egg yolks, 1/2 cup sugar and 1
tablespoon vanilla until smooth. Blend in warm cream mixture a
ittle at a time. Whisk egg mixture into melted chocolate until
smooth.
6 Arrange toasted bread slices, buttered side up, in prepared dish
until dish is full. Pour chocolate mixture over bread and let rest
40 minutes, until liquid is absorbed.
7 Line a roasting pan with a damp kitchen towel. Place baking dish
on towel, inside roasting pan, and place roasting pan on oven
rack.
Fill roasting pan with boiling water to reach halfway up the sides
of the baking dish. Bake 40 to 50 minutes, until knife inserted in
center comes out clean. Let rest 8 hours or overnight.
8 To make sauce, melt unsweetened chocolate in small saucepan over
low heat. Stir in 1 tablespoon butter until melted. Stir in
boiling
water, 1/2 cup sugar and corn syrup until smooth. Increase heat to
medium and bring to a boil Boil gently 3 minutes. Remove from heat
and stir in 1 teaspoon vanilla.
9 To serve: Warm bottom of baking dish, loosen edges of pudding
with a knife then invert cold pudding onto a serving platter. Serve
with warm chocolate sauce.

does anyone have a recipe for a jello cake? This cake tastes like
Jello when it is finished baking. It's not the one where you poke
holes in the cake and pour jello into the holes before it jells. I
had this cake years ago and it is delicious. My aunt made it but
she lost the recipe.
