Subject: Skillet Cornbread baked
in Oven
I've seen several recipes for the cornbread fried in the skillet
but this is one that my mother-in-law in Louisiana used to make.
This might be what you are looking for.
Skillet Cornbread baked in Oven
1/2 cup white cornmeal
1 tsp baking powder
1/2 tstp salt
1 egg
1/2 cup milk
Mix and bake in greased cast iron skillet (8' size) for about 15
minutes at 350 degrees.
There are also recipes on the package of white cornmeal. Hope
this helps!
(This is not a sweet cornbread but my husband loves it).

1 tsp vanilla
PREHEAT oven to 350%.
Combine the margarine, oil, chocolate and waterin a sauce pan and
heat until chocolate is melted
(I do this on medium heat).
Combine flour, baking soda (I usually add some of the sugar to
this and stir them together before adding the remaining sugar to
be sure the soda is mixed well into the flour and not be lumpy)
add remainig sugar, mix in cinnamon, stir in milk, eggs and
vanilla,
BE SURE TO USE A LARGE MIXING BOWL FOR THE ABOVE starting with
the flour ingredents
THEN Blend IN the first mixture.
Pour batter into a greased/floured sheath cake
pan 12x18 size and bake 20 to 25 minutes or until cake is done
(toothpick test center)
Mexican Chocolate Icing
1 stick margarine
2 squares unsweetened chocolate
6 tablespoons milk
1 (1 lb box powdered sugar)
1 tsp vanilla1/2 cup chopped pecans
Combine margarine, chocolate and milk in a saucepan and HEAT
until bubbles form around the edges.
Remove from heat. Add powdered sugar, vanilla and pecans,
( I add slowly, stirring to avoid lumping).
Beat and ice cake in pan while still warm. Good luck with this
