Subject: Green Beans with Potatoes

Could someone provided me with a good southern style recipe for green
beans with potatoes.
My grandmother used to make them on the holidays but somehow her
recipe was never passed down, but I never got a similar recipes
anywhere. I know there was either bacon or smoked neck bones or ham
hocks...the rest is a blur. Can anyone help. Thanx. Debra

Subject: Recipe-Lima Beans

Lima Beans

1/2 lb dry lima beans (soaked overnight or 4 hrs)
half a onion
salt / pepper/ Lowry season salt (optional)
2 pieces ham hock
3-4 pieces smoke neck bone
ham meat


After rinsing beans, soak lima beans the night before or 4 hours
(soaking beans delay cooking time), clean hamhock and neckbone
removing excess fat. Place meat and lima beans together in pot.
Cover with water making sure meat is completely covered in water. Add
salt and pepper to taste ( be very light with seasoning because the
meat makes its own salt). Add onions. Allow to cook on Med / high
for 3 hours stirring every 15-20 min. Then add the ham meat and
reduce heat to Medium low allowing to cook an additional hour. Soup
is done when thickness occurs and beans are tender enough for a fork
to run clear through.

The following recipe is my mothers Chocolate Frosting recipe.

Old Fashioned Chocolate Frosting

2 cups sugar
1 1/4 cups milk
1 heaping tablespoon powdered chocolate
dash salt
pinch baking soda
1/2 stick margarine
1 teaspoon vanilla

In sauce pan mix sugar and chocolate. Then add milk, dash of salt and
mix well. Set on stove on medium heat stirring frequently and let come
to boil; add margarine and let come to boil and keep stirred. Let get
to a good boil and add pinch of soda. Let boil until it comes to a
soft ball stage stirring constantly. (I have a cup of ice water to
drop in) When it is at soft ball stage, add vanilla. Remove from
heat
and beat until it gets to spreading consistency. Spread on cake.

Subject: WHITE CHOCOLATE TRUFFLES:

WHITE CHOCOLATE TRUFFLES:

- 1/4 cup blanched,slivered almonds,toasted( 1 oz.)
- 2 tbs butter
- 3 tbs heavy cream
- 8 oz white chocolate,coarsely chopped
- 1 tbs almond extract or vanilla extract
- 1/4 cup shredded sweetened coconut

In a small blender or food processor fitted with the metal
blade,process nuts until finely ground. In a small saucepan,melt
butter over medium heat.Stir in cream.Bring to a boil over med-high
heat.Remove from heat. Stir in white chocolate.Let stand until
softened,2 minutes. Stir intil smooth.
Stir in almond extract & nuts. Chill until firm,2 hours.
In a skillet,toast coconut over med-heat,stirring frequently,until
golden brown,5 minutes.Let stand until cool.
Shape white chocolate mixture into 18 one inch balls. Roll truffles in
toasted coconut to coat. Chill overnight. ( Makes a great gift, or
served at a dinner party) Enjoy!!!!

I am looking for a recipe for a dish called "Pretzel Chicken" that I
had last year at Big Bear Brewery, 1800 N. University Dr., Coral

Subject: Lemonade

Old Fashioned Lemonade

In the 1800's this is how people made lemonade - you can do it too!
It's wonderful! This makes about four 8-ounce glasses.

All you need is:

4 Lemons
1 cup Sugar
1 quart Water

To make it: Peel the rinds from the lemons with a paring knife and
cut them into ? slices. Set the lemons aside. Place the rinds in a
mixing bowl and sprinkle the sugar over them. Let stand for one hour
so that the sugar begins to soak up the lemon oil.

Bring the water to a boil in a covered saucepan and carefully pour
the hot water over the sugared lemon rinds.

Allow the mixture to cool for 20 minutes and then remove the rinds
with a mixing spoon.

Squeeze the lemons into another bowl, then pour the juice through a
strainer into the sugar mixture.

Stir the mixture well, pour it into a pitcher and pop it in the
fridge! Serve with ice cubes and it's just delicious on a hot summer
day!

Old Fashioned Lemonade
Serving Size : 6

Ingredients

2 each lemons, juiced
1 each orange, juiced
5 tablespoons sugar

Preparation

This is an old fashioned recipe for lemonade. Squeeze the juice of
two lemons and one orange into a large pitcher of water. Add two
tablespoons sugar for each lemon, one tablespoon sugar for each
orange. Stir and serve.

OLD FASHIONED LEMONADE
Yield: 12 servings

Ingredients

1-1/2 cups grandulated sugar
1-1/2 cups water
1 tablespoon lemon rind, finely grated
1-1/2 cups lemon juice (6-7 lemons)
1 lemon, thinly sliced
Mint sprigs

Directions

In small saucepan, stir together sugar, water and lemon rind. Bring
to a boil for 5 minutes, stirring constantly; Remove from heat and
let cool. Stir in lemon juice. Transfer to a jar; cover and
refrigerate for up to 3 weeks. To serve, place 2 ice cubes in each
tall glass. Add 1/4 cup of the syrup and 3/4 cup cold water; stir
well. Garnish with lemon slice and sprig of mint.

Subject: Pie

Coconut Cream Pie
Makes 8 servings

A rich and smooth pie. It takes a half hour to make, but is well
worth the effort!

Ingredients

1 cup white sugar
1/2 cup all-purpose flour
1/4 teaspoon salt
3 cups milk, room temperature
4 large eggs
3 tablespoons butter
1-1/2 teaspoons vanilla extract
1 cup flaked coconut
1 (9 inch) pie shell, baked

Directions

1. In a medium saucepan, combine sugar, flour and salt over a medium
heat; gradually stir in milk. Cook and stir over medium heat until
the mixture is thick and bubbly. Reduce heat to low and cook 2
minutes more. Remove the pan from heat.
2. Separate the egg yolks from whites. Beat the egg yolks slightly.
Gradually stir 1 cup of the hot mixture into yolks. Return the egg
mixture to the saucepan and bring the entire mixture to a gentle
boil. Cook and stir 2 minutes before removing the pan from heat.
3. Stir butter, vanilla, and coconut into the hot mixture. Pour the
hot filling into the baked pie crust. Cool. Cover and chill to store
the pie if not serving immediately.

Grandma's Egg Custard Pie
Makes one 9-inch pie

This is the 1999 American Pie Council's National Pie Championship's
first place winner in the Custard Pie Category.

Ingredients

1 (9 inch) unbaked pie crust
3 large eggs, room temperature, beaten
3/4 cup white sugar
1/4 teaspoon salt
1 teaspoon vanilla extract
1 egg white
2-1/2 cups scalded milk
1/4 teaspoon ground nutmeg
3 drops yellow food coloring (optional)

Directions

1. Preheat oven to 400 degrees F (205 degrees C).
2. Mix together eggs, sugar, salt and vanilla. Stir well. Blend in the
scalded milk. For more yellow color, add few drops yellow food
coloring.
3. Line pie pan with pastry and brush inside bottom and sides of
shell with egg white to help prevent a soggy crust. Pour custard
mixture into pie crust. Sprinkle with nutmeg.
4. Bake for 30 to 35 minutes or until a knife inserted near center
comes out clean. Cool on rack.

2 cups sugar
3 eggs
2 cups flour
2 tbs. cinnamon
4 cups sliced apples
1/2 cup vegtable oil
2 tsp. vanilla
2 tsp. baking powder
1/2 tsp. salt

Cream together sugar,oil,eggs and vanilla. Add flour,baking powder,
cinnamon and salt. Fold in allples. The batter will be thick.
Spread in a greased 9X13" pan or tube pan. Bake in 350 degree over
for 1 hour.

Subject: Recipe for lemonade

1-1/2 c. sugar
1/2 c. boiling water
1-1/2 c. fresh lemon juice
1 T. grated rind
5 c. cold water

Combine sugar and boiling water. Stir until sugar is dissolved. Add
lemon juice, grated rind, and cold water. Chill and serve over ice.

Subject: Bollos Recipes ???

Dear Sir-- I am an old WWII Navy man and I had submarine duty for
about two years in Key West in the late 40's, early 50's. I recall a
little Cuban shop just outside the Base gate with a little old lady
who made "Cuban Bollos". I can still taste the garlic and my family
and I loved them. Since, I have tried to find a proper bollos recipe
to no avail. I wonder if you can help me or steer me to a proper
address where help would be available.
