Subject: SQUASH PIE:

SQUASH PIE:

- 2 cups freshly grated, peeled yellow squash
- 1 1/2 cups granulated sugar
- 1 tsp cornstarch
- 1 tsp vanilla
- 1 tsp coconut extract
- 1 Tbs all-purpose flour
- 3 eggs
- 1/4 cup margarine, melted
- pinch of salt
- 1 deep-dish 9 inch pie crust, unbaked

In a large bowl, combine squash, sugar, cornstarch, vanilla, coconut
extract, flour, eggs, margarine and salt. Mix well. Pour into unbaked
pie crust. bake in a preheated 400 degree oven for 10-15 minutes;
reduce oven temperature to 350 degrees and continue baking 40 minutes
to 50 minutes, or until golden brown. Shield the pie with aluminum
foil if the top is browned but the center is not cooked through.
Serves 6-8

Subject: PUMPKIN CHEESECAKE WITH CRANBERRY SAUCE:

PUMPKIN CHEESECAKE WITH CRANBERRY SAUCE:

CRUST:
- 1 cup graham cracker crumbs
- 1 Tbs granulated sugar
- 2 Tbs melted butter or margarine

FILLING:
- 3 packages ( 8 oz each) cream cheese, softened at room temperature
- 1 cup granulated sugar
- 1 cup dairy sour cream
- 1 tsp vanilla
- 1 Tbs pumpkin pie spice
- 6 eggs
- 1 cup canned pumpkin
CRANBERRY SAUCE:( follows)

For the crust, combine crumbs, sugar and melted butter. Mix well.
Spread evenly in a 9 inch pan,set aside. For the filling, combine
cream cheese and sugar in the large mixing bowl and mix with a beater
on medium speed until light and creamy. Add sour cream; mix 1 minute.
Add vanilla and pumpkin pie spice; mix 1 minute. Add eggs,mix and
pumpkin, and mix 2 minutes. Pour filling into graham cracker crust.
Bake in preheated oven at 375 degrees for 45 minutes, or until firm.
Chill in refrigerator overnight. Serve with the Cranberry sauce:

CRANBERRY SAUCE:

- 1 quart water
- 1 package ( 12 oz) fresh cranberries
- 1 cup granulated sugar
- 1 tsp lemon juice
- 1 tsp almond extract or to taste

In a large saucepan, combine ater, cranberries, sugar and lemon juice.
Bring to a boil until berries are soft to the touch. Drain the juice
into a bowl; reserve juice. Puree cranberries in a blender or food
processor. Combine puree and reserved juice. Flavor with almond
extract to taste. Chill. When ready to serve Pumpkin cheesecake, pour
some cranberry sauce over each serving.
Makes 8 servings

Old-fashioned Rice Pudding
Serves 6 to 8

Ingredients

2 cups cooked rice
2 cups milk
1/8 teaspoon salt
1/3 cup sugar
1 tablespoon butter
2 eggs, well beaten
1/4 cup raisins
1/8 teaspoon grated nutmeg
1/8 teaspoon cinnamon (optional)

Directions

Preheat oven to 350°F. Butter a 2-quart casserole dish. Mix
ingredients well. Bake 20 minutes.

NOTE: Fruit may be added to the rice in layers.

Subject: Candy

Chocolate or Cream Fudge

Ingredients

4 cups sugar
4 tablespoons white corn syrup
2 heaping teaspoons cornstarch
1-1/3 cups milk or cream
4 squares bitter chocolate
2 tablespoons butter

Directions

Cook first 4 ingredients to soft-ball stage (238°F). Add chocolate
and butter; do not stir. When cool, beat until candy loses its sheen;
when thick enough to handle, knead and shape into balls. When set,
cut in pieces.

For Cream Fudge: Omit chocolate and use undiluted evaporated milk.
Cook over low heat, stirring constantly so it does not curdle.

Marinade for Bear Chunks on a skewer
1/2 cup soy sauce
1 tab. honey
1/4 cup peanut oil
1/4 cup lemon juice
1 tsp. curry powder
1 tsp. chili powder
1 cup finely chopped onions
2 cloves garlic, finely chopped
salt, pepper and ground ginger to taste.
MIX ALL the Ingredients together and Marinate Bear 1-2 days
before grilling in closed container and make sure you keep it
refrigerated .
This recipe has been used in my family for deer, bear , beef and
carabou for over 52 years I know of !

This is a Holiday Snack our family loves.
Spiced Nuts on a tray
YOU WILL NEED 1st.
Almonds, pecans and walnuts
2 Tab. Cinnamon
1/2 cup sugar
1/8 tsp. nutmeg
1 egg white
1 cup nuts
Mix cinnamon , sugar, nutmeg in small bowl. Put egg
white in another bowl and beat lightly then add nuts in egg whites
a few at a time, stirring til well coated. Then put nuts in
spice mixture and coat them throughly. Place whole mixture on
a greased cookie sheet , baking 30 minutes at 300 degrees.
YUMMY !!! I always double the batch !!

Very Simple Biscuit Recipe (not those piddly twocups of flour)
but substantial recipe for big biscuits for hearty appetites...
Just Simple Recipe I can throw together possibly with healthy
ingredients like olive oil, milk powder...I worry about baking
soda and baking powder as I hear they cause Alzheimer...there
is supposed have a chemical in them bad for brain tissue...If
anyone has a healthy simple abundant recipe I would be so
happy and so would my big abundant family....

This dressing has such a wonderful flavor combination.

I have known for years the combination of apples and onions are a
wonderful flavor, but didn’t realize how much body the potatoes give a
dressing. Next time you are looking for a good side with your Pork
roast or chops, or Chicken, try this.


SAUSAGE, APPLE and POTATO STUFFING

Yield: 4 servings

½ lb. sausage
2 cups potatoes, cut into 1/2-inch cubes ( 2 potatoes )

1 cup chopped tart apple ( 2 medium apples )
1/2 cup chopped onion
3 tbsp butter or margarine

2 cups potatoes, cut into 1/2-inch cubes ( 2 potatoes )

2 cups packaged unseasoned bread cubes ( 3 pieces of sliced toast
cubed)
salt and pepper

2 eggs beaten

½ cup milk



1. Brown sausage in a skillet.

2. Add the apples and onions in the butter or margarine, with the
poultry seasoning , cook till they are soft.

3. Add this mixture to a large mixing bowl

4. Add bread cubes, eggs and milk.

5. Add some salt and pepper to taste.

6. This can be baked now for 30 minutes at 350 degrees covered. You
can also use it to stuff a pork roast or chops.

TEA CAKES:

- 3 cups sugar
- 1 cup shortening
- 1 tsp soda
- 1 cup buttermilk
- 3 eggs
- 1/4 tsp salt
- 1/2 tsp nutmeg
- 4 cups flour

Cream the sugar and shortening in a bowl. Dissolve the soda in
buttermilk, then stir into the creamed mixture. Beat the eggs, one at
a time. Stir in the remaining ingredients. Roll out on a floured
pastry cloth and cut with cookie cutter. Place on a greased cookie
sheet. Bake at 350 degrees for 12-15 minutes or until golden brown.

Butter Crunch: 1 stick Oleo 1 stick Butter
1 cup sugar chopped nuts of your choice and as many as you like
1 cup usually 6 hersey bars 1st. combine the
1st. 3 ingredients in heavy pan ( don't want it to scorch ) Cook &
stirring constantly til a carmel color. Add nuts and stir then
spread on a non stick cookie sheet . Immediately put the hersey bars
on top of hot mixture. Spread evenly when melted. Cool it, then
sprinkle nuts on top. Place in refrigerator until cold, remove &
break into pieces . ENJOY - YUMMY SNACK !! Our f! amily loves these
all year long.

Subject: SESAME COOKIES:

SESAME COOKIES:

- 1 cup all-purpose flour
- 1/2 cup sifted confectioners sugar
- 1/2 cup cornstarch
- 1 cup butter, softened
- 1/4 cup sesame seeds, toasted

In a medium bowl, combine flour, sugar, and cornstarch. using a pstry
blender or 2 knives, cut butter into dry ingredients until mixture
resembles coarse meal. Knead on a lightly floured surface until a soft
dough forms. Shape into a 12 inch long roll. Coat with sesame seeds.
Wrap in plastic wrap and refrigerate 1 hour.
Preheat oven to 300 degrees. Cut dough into 1/4 inch thick slices and
place on a greased baking sheet. Bake 20-25 minutes or until edges are
light brown. Cool completely on a wire rack. Yield: about 3 1/2 dozen
cookies

5 Minute Fudge Recipe I have used for 43 years. # 1 2 1/4 cup
sugar 1 small can pet milk 16 large marshmellows 1/2 stick
butter or margarine Cook that over Medium heat until bubbly -
then boil 5 imns. STIR CONSTANTLY, Remove from heat # 2
ADD - 6 oz. choc. chips 1 cup chopped nuts ( i use walnuts or
pecans or a mix of both ) 1 tsp. vanilla Then stir by hand
until completely mixed and then dump into 8x8 pan. When cool
-you either pop out & cut or cut in pan and serve piece by piece.
