Subject: Relish

Chow-Chow

1 gal. cabbage, chopped
6 green bell peppers
8 c. sugar
4 T. mustard seed
1/2 gal. red apple cider vinegar
2 qts. green tomatoes, ground (measure after ground)
8 onions, chopped
3 red bell peppers
2 T. turmeric
3 T. celery seeds
hot peppers

Chop cabbage, onions, and peppers. Add spices, sugar (1/2 c.),
salt, and vinegar. Cook to boil, then add vegetables.

Cook 20 minutes. Put in hot jars and seal.

Makes about 18 pints.

Note: Grind tomatoes and drain all the juice while preparing the
rest of the vegetables. For sugarless, omit sugar or use small
amount.

Subject: Tex Mex Casserole

awesome tex mex dish
1 medium onion, diced
One 8-ounce can diced green chiles
1 can green enchilada sauce
1 can chicken broth
1 teaspoon chili powder
1 teaspoon cumin
1/2 diced bell pepper
4 diced chicken breasts or 3/4 pound lean ground beef
1 package corn tortillas (at least 20)
Velveeta processed cheese
Saute all ingredients, except tortillas and cheese, over medium
heat. Cut corn tortillas into 1/2 x 2-inch portions. Spray an
11 x 7-inch Pyrex dish with non-stick cooking spray. Layer
tortillas to cover bottom; add 1/2 sauteed ingredients. Repeat
tortilla layer; add balance of ingredients. Cover with 1/4-inch
of cheese. Bake at 250 degrees for 30 minutes.

To Paul in Houston. Was the creamy cereal Cream of Wheat?
Or maybe a wheat cereal made by Ralston. I can no longer find this
cereal and I served it to my children long ago. It has a pinkish
color and had the consistency of cornmeal. Delicious!

Subject: Low-fat Desserts

Apple Cinnamon Muffins

2 1/2 cups oat bran
1 1/4 teaspoon cinnamon (or more)
1 tablespoon baking powder
1/2 cup evaporated skim milk (or soy or rice)
3/4 cup apple juice concentrate
2 egg whites
1 medium apple, cored and chopped, not peeled

Preheat oven to 425F. Mix dry ingredients. Mix wet
ingredients.
Blend together, stir in apples. Bake as directed above.

Note: I add either 2 mashed bananas or 1/2 cup applesauce.
Makes
the muffins moister. Any fruits are great in these: peaches,
pears,
berries, etc.

Low-Cal Busy Day Cobbler


1 3/4 ounces butter
3 1/2 ounces sugar
5/8 cup milk
3 1/2 ounces flour
2 1/8 teaspoons baking powder
2 5/8 cups tart cherries
1/8 cup sugar

1. Preheat oven to 175 øC .

2. Drain cherries, saving liquid.

3. Cream butter and sugar together.

4. Alternately add in milk and sifted dry ingredients.

5. Pour into a buttered and floured casserole dish.

6. Top evenly with cherries. Sprinkle sugar on top and cover
with saved liquid/juice.

7. Bake 45-50 minutes.

Chocolate Brownies, Low cal

6 ounces Chocolate -- semisweet
4 each Egg whites
2/3 cup Sugar
1 teaspoon Baking powder
1/2 cup Hot water
1 teaspoon Vanilla
2/3 cup All-purpose flour
1 pinch Salt
Powdered Sugar

In large heatproof bowl set over hot water, melt chocolate with
water, stirring until smooth. Remove from heat; let cool slightly.
Whisk in egg whites and vanilla. Stir together sugar, flour,
baking powder and salt; stir into chocolate batter just until combined.
Pour into lightly greased 8 in. square cake pan. Bake in 350F oven for
20 to 25 minutes or until edges pull away from
pan. Let cool on rack; dust with icing sugar.

Fat-Free Chocolate Cake

Non-stick cooking spray
1 1/4 cups Flour
1/2 cup Unsweetened cocoa
1/4 cup Cornstarch
1 teaspoon Baking powder
1/2 teaspoon Baking soda
1/2 teaspoon Salt
1 1/4 cups Sugar
1 cup Water
3 1/2 cup Corn syrup -- light or dark
Confectioners' sugar (opt.)

Spray 9-inch square pan with cooking spray. In large bowl combine
next seven ingredients. In medium bowl stir sugar and water
until sugar is almost dissolved. Add egg whites and corn syrup;
stir until blended. Gradually add to dry ingredients, stirring
until
smooth. Pour into prepared pan. Bake in 350 F oven 35 minutes or
until toothpick
inserted in center comes out clean. Cool in pan on wire rack. If
desired, sprinkle with confectioners' sugar.

Subject: Cake

Italian Whipped Cream Sponge Cake

1/4 to 1/2 cup Rosolio (approximate) (Italian liqueur)
1/4 cup Rum (approximate)
1/4 cup Italian Brandy (approximate)

Vanilla Cream Filling
Chocolate Cream Filling
Whipped Cream
Grated unsweetened chocolate

Make Creams and chill.

Vanilla Cream Filling
1/2 cup sugar
2 Tablespoons cornstarch
1/8 teaspoon salt
1/2 cup cold milk
1 1/2 cups scalded milk
3 eggs slightly beaten
2 teaspoons vanilla extract

Combine sugar, constarch, and salt in a saucepan. Gradually add
cold
milk, stirring well. Slowly stir in the scalded milk.

Stirring gently and constantly, rapidly bring mixture to boiling
over
direct heat and cook 3 minutes. Pour into top of double boiler and
place over simmering water. Cover and cook about 12 minutes,
stirring
3 or 4 times.

Vigorously stir about 3 Tablespoons hot mixture into the eggs.
Immediately blend into mixture in double boiler. Cook over
simmering
water 3 to 5 minutes. Stir slowly so mixture cooks evenly. Remove
from heat and cool.

Stir in vanilla extract and chill.

Chocolate Cream Filling
1 1/2 ounces (1 1/2 squares) unsweetened chocolate
2/3 cups sugar
2 Tablespoons cornstarch
1/8 teaspoon salt
1/2 cup cold milk
1 1/2 cups scalded milk
3 eggs, slightly beaten
1 teaspoon vanilla

Add unsweetened chocolate to 1 1/2 cups of milk and scald. Combine
sugar, cornstarch, and salt in a saucepan. Gradually add cold
milk,
stirring well. Slowly stir in the scalded milk. Stirring gently
and
constantly, rapidly bring mixture to boiling over direct heat and
cook 3 minutes. Pour into top of double boiler and place over
simmering water. Cover and cook about 12 minutes, stirring 3 or 4

Whipped Cream
2 cups chilled whipping cream
6 Tablespoons confectioner's sugar
2 teaspoons vanilla extract

Beat whipping cream, 1 cup at a time, in a chilled 1-quart bowl
using
chilled beaters. Beat until cream stands in peaks. Put whipped
cream
into a large chilled bowl. Fold or beat confectioner's sugar and
vanilla extract into whipped cream. until blended.

Assembling Rum Cake: Place one layer of the cake on serving dish
and
sprinkle with the Italian Brandy. Spread half the vanilla cream

Place the second layer of cake crust side down and sprinkle with
Rosolio. Spread half the chocolate cream.

Place the third layer of cake crust side down and sprinkle with
Rum.
Cover the top of the cake with the remaining vanilla cream.

Cover the sides of the cake with the remaining chocolate cream.

Decorate the top and bottom edges with the whipped cream. Sprinkle
the top of the cake with grated unsweetened chocolate. Use #27
decorating star tip.

Store dessert in the refrigerator until ready to serve.

Italian Sponge Cake

5 egg yolks
5 egg whites
1 cup sugar
2 TBS lemon juice
1 tsp grated lemon peel
1 tsp vanilla extract
1/2 tsp salt
1 cup sifted cake flour

Combine egg yolks, 1/2 cup sugar, lemon juice, lemon peel, and
vanilla extract. Beat 3 - 4 minutes with an electric mixer on
medium-high speed; set aside.

Add salt to egg white and beat until frothy. Gradually add 1/2 cup
sugar, beating constantly until stiff peaks are formed.

Gently fold egg yolk mixture into beaten egg whites. Sift flour
over the egg mixture, 1/4 cup at a time, gently folding until just
blended after each addition.

Turn batter into a 9 inch tube pan. (see note) Bake at 325 for 60
to 65 minutes, or until cake springs back when lightly touched or
when a cake tester inserted comes out clean. Invert and leave cake in pan
until completely cooled.

NOTE: For Zuppa Inglese, pour batter into three 11 x 7 x 1 1/2
inch
baking pans.
Bake at 325 for 30 to 35 minutes.

Subject: Warm Cereal

Wholesome Porridge

Ingredients

2 tbsp Wheat or Maize or Bajra (germ cleaned)
2 cups Water
Salt to taste
1 cup Milk (hot and sweetened)

Method

Soak the germ in the water for 5 minutes. Gently strain the husky
part with a strainer, saving the water. Transfer back the water to
the wheat germ. Add salt, stir. Put to boil and stir continuously
till boiling stage is received. Partially cover and cook on low
till the germ is fully cooked. Stir frequently in between, adding more
water if required. When pressed between the thumb and finger, the
germ should break easily. Then it is done. Serve hot with
sweetened milk or if desired with salted curd or buttermilk. Best when
fevers, sore throats, make swallowing difficult.
Making time: 30 minutes

When I was young my mother prepared a dish from corn meal as a hot
cereal and she called it "pappa" To make it:

Bring salted water to a boil.
Stir water into cornmeal (white or yellow) in water to form a
paste.
Do not stop stirring the cornmeal mixture.
Stir the mixture quickly into the boiling water carefully.
once the mixture starts to boil, turn heat down low and cook until
done.

Do Not use self-rising cornmeal. I am not sure of the amounts of
boiling water to cornmeal but I do know that the cornmeal will NOT
combine with the boiling water unless it has been mositened first.
I hope this is what you are looking for.
