Subject: ?? tea cakes ??

I grew up with sweet biscuits on the stove in my home. They
were always there for SNACKS vs. the cookie jar that we now have.
Since moving to the south I've been introduced to Tea Cakes.
Does any one have a recipe for tea cakes or sweet biscuits?

ASPARAGUS VINAIGRETTE
24 asparagus spears
3 T. balsamic vinegar
2 T. minced red onion
1 t. olive oil
1 clove garlic, minced
1/4 t. black pepper

Put 1 inch water in bottom half of steamer. Bring to a boil.
Place asparagus in top half and reduce heat to low. Cover and
simmer until tender. Meanwhile, in a small bowl, combine
remaining ingredients. Place asparagus on serving platter and
sprinkle with vinegar mixture. Serve warm.


BAKED SWEET POTATO WEDGES
2 T. frozen orange juice concentrate
1 t. onion powder
1/2 t. real salt
1/8 t. ground red pepper
1 lb. sweet potatoes, cut into 1/2 sticks

Preheat oven to 450. Mix first 4 ingredient in mixing bowl. Add
potato sticks. Turn to coat. Arrange sticks on cookie sheet
covered with foil and sprayed with non-stick spray. Bake 10
minutes, Turn carefully, bake 10 minutes longer.


ROAST CHICKEN WITH YOGURT SAUCE
3 lbs. skinless chicken breast
1/4 t. ground mustard
1 c. plain non-fat yogurt
1/4 c. lemon juice
1/2 t. real salt
1/2 t. ground cardamom
1/4 t. ground ginger
1/4 t. ground cumin
1/8 t. crushed red pepper
1/4 t. pepper
1 clove garlic, minced
1/4 c. spring water

Blend all ingredients except chicken and water in shallow bowl.
Add chicken, turn pieces to coat well. Cover, refrigerate for
12 hours, turning pieces every couple hours. Remove pieces from
marinade. Bake at 375 for 20 minutes. Spoon marinade over pieces
and bake 15 more min.
Remove chicken, mix water into drippings, serve hot with chicken.

This is a message back to the person looking for the jelled
pig parts, its called souse or hog head cheese. Boars Head
Meat makes some and most Winn Dixie's have it in the packaged
meat department, look there. Good luck!

Subject: 3 Layered Cobbler



Hi
This is the 3 crust cobbler that I found

You will need:
Deep large baking pan
Cookie sheet
2 medium and 1 small bowl

Filling:
6 cups each of Apple, Peach and Mixed Berries (you can use
strawberries halved, blueberries, blackberries, or raspberries)
all are either fresh or frozen.
3 teaspoon of lemon rind
3 tablespoons of lemon juice
1.5 cups of sugar
3/4 cup instant tapioca pudding
1/2 stick of unsalted butter sliced small strips
3 teaspoons cinnamon
3 teaspoons allspice
3 teaspoons nutmeg
Topping you can make from scratch or use jiffy/Bisquick either
of the three works.

2 cups of all- purpose flour
3 tablespoons of toasted wheat germ
2 teaspoons of baking powder
1/4 teaspoon of salt
1 stick of unsalted butter chilled and cut into small pieces
1.5 cup2 of milk
1 egg white lightly beaten
3 tablespoons of sugar
1 tablespoon of vanilla flavoring

If you use a powdered bisquit mix
4 cups of bisquit mixture
3 tablespoons of toasted wheat germ
1 stick of unsalted butter chilled and cut into small pieces
1 cup of Milk
1 egg white lightly beaten
3 tablespoons of sugar
1 tablespoon of vanilla flavoring

Heat oven to 375
Mix each fruit separately using one third of the lemon juice,
cinnamon, nutmeg, allspice lemon rind, sugar, and tapioca in each
of the mixing bowls used. Let set for 15 minutes.


Bisquit Topping
Stir together the flour wheat germ, baking powder, and salt in a
medium bowl. Cut in the butter with a pastry blender or 2 knives
until the mixture resembles coarse crumbs. Stir in the milk until
the dough comes together. It should be kinda sticky. Do the same
thing with the powdered bisquit mix.


Layering
You can layer any way you choose. I put in the apple layer first
make sure it's evenly distributed dot it with butter lightly and
then dollop 1/3 the bisquit mixture. Do each layer until you
have a completed the layering.

Place the baking pan on the cookie sheet (it will bubble over no
matter what you do, so I just prevent the oven cleaning) Place
on the middle rack and let back at 375 for 40 minutes or until
the bisquit topping is golden.
Serve cobbler warm topped with whipped cream or ice cream.

Makes about 6-10 servings

Herring roe is still being packed by a couple of
companies in Va. and North Carolina. One is produced
by Perry Wynns Fish Co. in Colerain N.C. 27924. They
pack it under the Chowan's Best brand. Contact them
and see if anyone in your area carries it. A small can
that cost 27 cents in the 70's now cost over $3.00 but
it's just as good as you remember it. Hopes this helps.
