I don't know if we can send personal messages across the list,
but I want to thank this person VERY much for posting this
warning!
I had just received a recipe for this exact method and went to the
store last night to get the milk to do it. I was going to make it
tonight, but I was so worn out with fatigue, I didn't feel like
messing with something for three hours! Thank you so much! Now I
have a question, when you take the lids off, do you boil them on

I am curious if anyone out there knows of a recipe that has
several types of beans with baked beans as the main ingredient
because of it's juice. Also it has bacon and I think ground
beef. It's sweet tasting sort of. It's a little on the soupy
side if you choose to eat it that way.

For Angela the low-cal dessert you requested.
1box diet orange jello or any citrus flavor.
1 1/2 cups boiling water stir until well mixed and chill until
syrupy. Fold in one 6oz. container of low fat sour cream and
mix well. Also add 1-1 1/2cups of well drained pineapple mix
well and chill until firm. you can also use well drained
mandarin oranges and this works well too. It tastes a lot like
cheese cake.

Subject: Cream Cheese Pound Cake
This cake is a real hit during the holidays.
Cream Cheese Pound Cake
3 sticks of butter (the real thing is best!)
1 8oz pkg cream cheese
6 eggs
3 cups sugar
3 cups of flour
1 tsp lemon or vanilla extract
Cream the butter and cream cheese together with an electric mixer
until well blended. Add 1 cup of sugar and blend well. Add 1 egg
and blend well. Alternate 1 cup sugar and 1 egg until sugar is
depleted. Add 1 cup of flour, blend well. Add 1 egg and alternate
flour with egg until flour is depleted. Add extract and blend
well.
Pour into a greased and floured tube pan and bake in a pre-heated
325 degree oven for 1 hour and 25 minutes. Ice with lemon glaze.
LEMON GLAZE
About 2 cups of confectioners sugar
1 tbsp butter melted
milk
3 tbsp lemon juice
(all of these measurements are approximate)
Mix these ingredients until smooth and the consistency of a glaze
(thicker than regular milk, but as thick as Eagle sweetened
condensed milk) Pour over the cake.

Subject: Pound Cake
I notice your pound cake recipe on your soul food site. Here is
a very easy one, original and absolutely gourmet. It takes only
four (4) ingredients:
1 pound sweet butter
1 pound confectioners sugar
6 eggs
3 cups cake flour very well sifted
Have all ingredients at room temperature.
Cream the butter with the sugar until extremely light and fluffy.
Add eggs, one at a time, beating well after each addition. Gently
stir in the flour, a little in a time but don't beat.
Bake at 325 degrees in a well greased and floured 10" tube pan
1-1/4 hours. Cool at least 10 minutes then turn out of pan very
carefully.
If you insist a bit of flavoring may be added but I find it
unnecessary.

Subject: Chicken and Dumplings
Chicken and Dumplings:
This recipe is easy as well as delicious. You can't go wrong with
this one.
1 whole chicken (about 3 1/4 to 3 1/2 pounds), washed and patted
dry
1 clove garlic, peeled, ends removed and minced, or 1/4 teaspoon
garlic powder
1 teaspoon salt, divided
1/2 teaspoon white pepper
2 teaspoons paprika
1/4 cup vegetable oil or melted margarine
2 tablespoons cornstarch
2 tablespoons hot water
2 cups chicken broth or stock
2 tablespoons chopped parsley
Preheat the oven to 375 degrees.
Split the chicken down the middle lengthwise. Trim away any
visible
fat and discard. Rinse chicken thoroughly with cold water and pat
dry.
Sprinkle the interior of the chicken with minced garlic or garlic
powder. Cut each chicken half into parts (breast, thigh, leg,
wing). Or cut into quarters.
Sprinkle the skin side of the chicken parts with 3/4 teaspoon of
salt, the white pepper and the paprika.
Place the chicken pieces, skin side up, in a 9-by-13-inch shallow
roasting pan. Pour the oil or margarine over the chicken. Loosely
cover the chicken with foil. Place on the lower rack in the oven
and bake 45 minutes.
Then remove the foil and place the roasting pan on the top oven
rack.
Continue baking about 10-15 minutes longer or until chicken is
browned, basting occasionally with the pan drippings. Chicken is
done
when the juices run clear when the meat is pierced with a fork.
Remove from the oven and transfer chicken to a platter.
Drain off and discard all but 2 tablespoons of the drippings in
the
roasting pan and set the pan aside. In a medium bowl, mix together
the cornstarch and hot water. Stir in the chicken broth and the
remaining 1/4 teaspoon of salt.
Set aside.
Place the pan with the drippings over medium-low heat. Stir in the
broth-cornstarch mixture, scraping up crusty bits from the bottom
of the pan. Increase the heat slightly and cook the gravy for 5
minutes or until it is bubbling hot and thickened.
Reduce the heat. Return the chicken to the roasting pan and spoon
the gravy over the chicken. Heat 4 to 5 minutes longer.
Place the chicken on a warm serving platter. Pour the gravy on and
sprinkle the chicken with the parsley.
Makes 4 servings, 2 pieces of chicken per serving.

Subject: FRIED GREEN TOMATOES
FRIED GREEN TOMATOES
Ingredients:
2 cups thinly sliced green tomatoes
1 cup all-purpose flour
1 tbsp salt
1 tsp black pepper
1 tsp cayenne pepper
1/2 tsp garlic powder
3 large eggs
3/4 cup evaporated milk.
peanut oil for frying
Directions:
In a pie plate or similar dish combine the dry ingredients.
In a medium-sized bowl whip eggs and milk together.
In a moderately deep skillet heat oil until a drop of water
will sizzle in it.
Dip each tomato slice in the egg wash, then coat booth sides
with flour mixture, then place in hot oil. Brown both sides.
Makes 4 servings

Help...
I am looking for what for a recipe that my mother used to make,
but it was so long ago, she has forgotten it.
She called it Crab Creole. What I remember is that there were stewed tomatoes,
crab, onion, rice, I think shredded carrots and celery, but I could be
totally
off. Can anyone help me with this. I LOVED IT and have been
thinking about this delicious recipe a lot.

Subject: Homemade Mayonnaise recipe:
- 1 egg yolk
-pinch of salt
-1/2 tsp dijon- style mustard
-2/3 cup olive oil
-2 tsp white wine vinegar or lemon juice
To prevent curdling, bring all ingredients to room tempature
before you start,.
Place egg yolk in a bowl, whisk in salt & mustard. Whisking
constantly, begin to add oil drop by drop at first.
Increase to a steady trickle as the mayonaisse thickens. When all
oil has been added, beat in vinegar or lemon juice. Correct
seasoning, if neccesary. If desired, thin mayonnaise with a bit of
hot water.
Makes about 2/3 cup.

Subject: German Potato Salad:
-2 lbs thin skinned potatoes unpeeled
-6 green onions, finely chopped
-1/3 cup mayonaisse
-1/3 cup plain yogurt
-salt & black pepper to taste
-chives, snipped
DIRECTIONS:
cook potatoes in boiling salted water till tender.
Drain & let cool.Dice cooled potatoes & place in a bowl; add green
onions
-Stir together mayonnaise & yogurt & fold into salad.
-Season w/ salt & pepper. Spoon into a salad bowl & add chives
on
top.

Chicken & Dressing
Make up a double recipe of cornbread, add 1 cup green onions,
1/3 cup celery, 1 tablespoon sage, 1 tablespoon of red pepper.
Use bacon fat and place about 6 tablespoons of this in your black
iron skillet. Heat fat and pour into cornbread mixture, stir well
and bake until done. crumble up and add 3 beaten eggs, 1 dozen
cooked hot tamales that have been cut up, and a pound of hot
sausage that has been cooked, drained well and crumbled up....
then enough chicken broth that you can bake this for about 45
minutes and it will still be moist....just guess, I do. Bake
until set.....sprinkle about 2 cups of cheese on top, and crushed
fritos....put back in oven and bake until cheese melts.
THIS IS MY OWN MADE UP RECIPE AND IT IS SO GOOD.....I FIX THIS
EVERY THANKSGIVING.
Something else I have done is to cook a chicken, debone, use
broth for this dressing and cut up chicken and put in dressing
along with everything else.
This make a huge casserole and a one dish deal with a nice salad
on the side.

Subject: Chicken and Dressing
Roast Chicken
Ingredients:
1 (3 1/2 lb.) chicken
1/3 tsp. salt
1/4 tsp. pepper
1/2 tsp. cumin
1/4 tsp. turmeric
1 tbsp. oil
Directions:
Discard excess fat from chicken. Mix salt, pepper, cumin,
turmeric and oil. Rub chicken over all with mixture. Spoon
stuffing into chicken, if desired. Set in a roasting pan and
roast at 400 degrees for about 1-1/4 hours, basting occasionally.
Serves 4

Cornbread Stuffing With Sausage
Makes 12 servings
Ingredients
1 pound ground sausage
2 cups chopped celery
2 large onions, chopped
5 cups crumbled cornbread
5 cups seasoned bread crumbs
2 3/4 cups chicken broth
1 1/2 teaspoons poultry seasoning
1 teaspoon ground sage
Directions
1 Preheat oven to 325 degrees F (165 degrees C).
2 Place sausage, celery and onions in a large, deep skillet.
Cook over medium high heat until evenly brown. Drain, crumble
and set aside.
3 In a large bowl combine sausage mixture with cornbread, bread
crumbs, chicken broth, poultry seasoning and sage. Mix well and
transfer to a 9x12 inch baking dish.
4 Bake, covered, for 45 minutes or until well set and cooked
through.

-2 cups sweet mashed potatoes
-3 eggs beaten
-1 cup evaporated milk
- 1 tsp ground cinammon
-1/2 tsp ground nutmeg
-1/4 tsp ground cloves
- 1/2 tsp salt
- 1 9 inch unbaked deep dish pie crust
DIRECTIONS:
1- preheat oven 350 F
2-In med bowl, mix potatoes, eggs, evaporated milk, cinnamon,
nutmeg,cloves, & salt. Pour into pie crust.
3- Bake at 350 F for 50 minutes, or till toothpick comes out
clean. Top with topping of your taste. ( whipped cream, vanilla
ice cream, etc.)
ENJOY!!!

White Potato Pie
Makes 2 pies
Ingredients
2 potatoes - peeled, boiled and mashed
2/3 cup butter
1 cup white sugar
1/2 teaspoon baking powder
1/8 teaspoon salt
1/2 cup heavy whipping cream
1/2 cup milk
2 teaspoons lemon zest
2 tablespoons lemon juice
1 teaspoon vanilla extract
4 eggs, beaten
2 (9 inch) pie shell
Directions
1 Preheat oven to 350 degrees F (175 degrees C).
2 In a medium mixing bowl mix sugar, baking powder, and salt,
then add potatoes and butter or margarine; mix well. Gradually
add whipping cream and milk, stirring until well blended. Stir
in lemon rind, juice, vanilla, and nutmeg. Add beaten eggs and
mix well.
3 Pour mixture into pie shells and put in preheated oven. Bake
for 55 minutes or until knife inserted in center comes out
clean. Best when served cold.
