Subject: GLAZED ONIONS:

GLAZED ONIONS:

- 2 lb. small onions
- 1/2 cup melted butter
- 6 tbs sugar
- Paprika

Cook the onions in a large amount of boiling,salted water for
about 40 minutes or till tender, then drain. Heat the butter in a
skillet. Add the onions & sprinkle with sugar. Cook over low heat
for 10 minutes or till onions are glazed, stirring frequently.
Sprinkle with paprika. Makes 6 servings

Subject: STUFFED ONIONS:

STUFFED ONIONS:

- 6 large white onions
- 1 large green pepper, chopped
- 1 lb. ground beef
- 1/2 tsp. garlic salt
- Salt & pepper to taste
- 1 cup grated cheddar cheese
- 1 cup tomato sauce

Cook the onions in boiling, salted water for 45 minutes, then
drain. Remove centers of onion carefully & chop centers. Cook the
green pepper, ground beef & seasonings in a skillet until beef is
brown. Place the onion shells in a casserole & stuff with beef
mixture. Top with cheese & tomato sauce. Bake @ 350 degrees for
45 minutes.

Subject: Rays Food Fair Rice Putting

I have been looking for a good Rice pudding recipe. I have tried
a few and they have been great. When I was a kid about 20 years
ago there was a grocery store in Saginaw Mi. In there deli they
had the best Rice Pudding. The only thing I can remember is it
was really yellow. I am not sure if they are from just egg yolks
or what. If anyone might have this please let me know

Subject: MARINATED ONIONS

MARINATED ONIONS:


- 1 1/4 cup vinegar
- 1/2 cup cooking oil
- 1/2 cup sugar
- 2 tsp. salt
- 10 Spanish onions, thinly sliced

Combine first 4 ingredients in a saucepan & heat, stirring until
sugar & salt are dissolved. Place the onions in a large jar &
pour in vinegar mixture. Refrigerate for several days, shaking
jar occasionally.

All of the talk about the School Cafeteria food reminds me of the
Peanut Butter Cake my elementary school made. If anyone has this
recipes I would love to have it. It was a sheet cake with
delicious peanut butter icing!

HOT ONION RELISH
Yields 8 PINTS

Ingredients

3 large Vidalia onions, finely chopped
1 cup brown sugar
12 red bell peppers, finely chopped
1 quart white vinegar
12 green bell peppers
1 Jalapeño pepper, finely chopped
1 tablespoon salt

Directions

Put the onions, bell peppers, and jalapeño into a pot of boiling
water and boil for 20 minutes. Meanwhile, in a kettle bring
additional water to the boil. Pour off the water in which the
onions and pepper have been cooked. Then pour over enough
boiling water to cover the vegetables and boil again for 15
minutes. Pour off the water again and add salt, sugar, and
vinegar. Boil 10 minutes, ladle into sterilized jars, and seal.
Makes 6-8 pints.

Also, Does anyone have a New Orleans Bread
Pudding Cake with the Burgundy Sauce..
Thanks..I am going to try Pauls Supreme Rice Pudding this week

Subject: Dressing/Stuffing

OLD-FASHIONED CORNBREAD DRESSING

Ingredients

2 cups self-rising cornmeal
2 eggs beaten
2 cups buttermilk
2 tablespoons bacon drippings, melted
3 stalks celery, chopped
1 medium onion, chopped
1/3 cup butter or margarine, melted
12 slices day old bread, crumbled
2 to 2 1/2 cups turkey or chicken broth
1 cup milk
2 eggs, beaten
1/4 teaspoon salt
1 teaspoon poultry seasoning
1/2 teaspoon rubbed sage
1/4 teaspoon pepper

Combine cornmeal, 2 eggs, buttermilk, and melted bacon drippings,
stirring well.
Place a well-greased 10-inch cast iron skillet in a 450 degree
oven for 4 minutes or until hot. Remove skillet from oven; spoon
batter into skillet.
Bake at 450 for 35 minutes or until cornbread is lightly browned.
Cool; crumble cornbread into a large bowl. Saute celery and
onion in butter until tender. Add sautéed vegetables and
remaining ingredients to crumbled cornbread, stirring well. Spoon
dressing into a lightly greased 13 x 9 x 2-inch pan. Bake at 350
for 25 to 30 minutes.

Yield
8 servings.

HINT One (10-3/4 ounce ) can of chicken broth and 1 cup of water
may be substituted for homemade chicken broth. (It's best to use
the broth from your turkey/chicken).

Dressing may be spooned into turkey/chicken cavity. Spoon any
remaining dressing into a lightly greased 2-quart casserole; bake
at 350 for 25 to 30 minutes.

THESE ARE TWO VERY GOOD RECIPES
2 LB WHEAT BREAD


ALL INGREDIENTS AT ROOM TEMPERATURE(70-80 F)

10 -12 OUNCES WATER
1 1/2 TSP SALT
1 1/2 TBS VEGETABLE OIL
2 TBS MOLASSES
2 TBS HONEY(OPTIONAL)
2 CUPS BREAD FLOUR
2 CUPS WHOLE WHEAT FLOUR
2 TSP ACTIVE DRY YEAST

PLUG INTO OUTLET.MEASURE ALL INGREDIENTS INTO BREAD PAN. SELECT
WHOLE WHEAT SETTING SELECT CRUST DESIRE PRESS START/STOP AT
END OF CYCLE REMOVE AND ENJOY



100% WHOLE WHEAT

10-12 OUNCES WATER
2 TSP SALT
2 TBS MOLASSES
1 TBS BROWN SUGAR
4 CUPS WHOLE WHEAT FLOUR
1 1/2 TBS VITAL GLUTEN
2 TSP ACTIIVE DRY YEAST

MEASURE ALL INGREDIENTS INTO BREAD PAN SELECT WHOLE WHEAT SETTING
PRESS START/STOP AT END OF CYCLE REMOVE AND ENJOY

Subject: Cake

German Chocolate Cake

Ingredients

1 pkg. German sweet chocolate
1/2 cup boiling water
1 cup Crisco
4 egg yolks, unbeaten (room temperature)
1/2 tsp. salt
2-1/2 cup cake flour
4 egg whites, slightly beaten (room temperature)
2 cup sugar
1 tsp. vanilla
1 tsp. soda
1 cup buttermilk

Directions

Melt chocolate in boiling water and cool. Cream butter and sugar
until fluffy. Add egg yolks, one at a time. Beat well after each.
Add chocolate and vanilla. Mix well. Sift together salt, soda,
and cake flour. Add alternately with buttermilk, beating well
after each addition. Fold in egg whites. Bake in three
8 or 9 inch pans at 350°F degrees for 35 minutes.

FROSTING FOR GERMAN CHOCOLATE CAKE:

1 stick butter
1 cup sugar
3 egg yolks (room temperature)
1 cup evaporated milk
1/2 cup chopped pecans
1 tsp. vanilla
1 can Baker's angel flake coconut

Bring to a boil and cook until thick, stirring constantly. Add
pecans, vanilla and coconut. Beat until thick enough to spread.

Easy German Chocolate Cake

Ingredients

1 cup flaked coconut
1 cup chopped pecans
1 box German chocolate cake mix
1 stick melted margarine
8 oz cream cheese
16 oz powdered sugar

Preparation

Grease & flour 9x13 baking disk. Sprinkle coconut & pecans on
bottom of pan. Mix cake mix according to package directions.
our over coconut & pecans. Cream margarine & cream cheese.
Add powdered sugar. Spoon on top of unbaked cake mixture.
Bake at 350°F for 45 minutes.
