Grilled Shrimp with Texas BBQ Rub Butter
Everyone seems to love grilled shrimp and I am no exception
to that rule. Fast and easy to make and taste so wonderful
why not grill some shrimp. These can be cooked on the grill
but you can also do them on the smoker if you wish to. These
wonderful shrimp can be eaten over lettuce, pasta, a bed of
rice, or just eaten straight off the grill with a side dish
of your favorite grilled vegetables or a nice baked potato.
What you will need:
2 or 3 pounds of uncooked jumbo shrimp, peeled and deveined
1/4 cup of Texas BBQ Rub (original or Texas Wild)
2 sticks of unsalted butter
1/2 teaspoon of minced garlic
12 long skewers (if you use the bamboo skewers put them in
water for about 30 minutes prior to putting the shrimp on
them)
Melt the butter in the microwave oven in a bowl. Add Texas
BBQ Rub and the minced garlic to the melted butter and mix
together. Place back in the microwave oven for about 30
seconds. Set aside half of the mixture for later use. We
will use ½ of the mixture for basting as the shrimp cook and
½ for serving with the shrimp when they are done.
Rinse the shrimp in cold running water and then drain and
pat dry. Place the shrimp on a skewer or in a grill basket
and grill using direct heat. Grill until the shrimp just
cook through. About 1 to 3 minutes per side. As the shrimp
are grilling baste the shrimp with the Texas BBQ butter
mixture (remember to save half of the mixture for later).
When done the shrimp will turn pinkish white and feel firm
to the touch. Discard any of the Texas BBQ Rub butter that
you used for basting.
Transfer the grilled shrimp to a platter or plates and pour
some of the remaining Texas BBQ Rub butter sauce over the
shrimp. If you would like serve them with fresh lime wedges.
