How To Get Rid Of Chitterlings Odor

Many people have emailed me saying they love chitterlings but not the odor. They want to know how
to get rid of it.

Well, you can't completely get rid of it. You can cut
down on it by trimming as much of the fat off of the
chitterlings as possible since the fat seems to store
much of the odor. You can also boil a few whole onions
with your chitterlings for say 1/2 hour. Pour off this
water and remove the onions, then continue with your favorite recipe.

To me, the odor, as long as it is not too strong is a part of the chitterlings experience. It's a lot like
eating fish. A lot of my friends only like certain
types of fish because the other smell too fishy. Oily
fish or red fish generally have a stronger smell.
However, since I grew up eating whatever I could get,
I think of the fishy smell as normal. Lately, I have
eaten a lot of fish like red snapper - which is very
white - and has virtually no fishy smell - however,
I still love fish such as bonito and red salmon which
which have a lot of oil.
